Description

A meat grinder is used for crushing meat, especially in sausage production. Since the meat may also contain tendons and cartilage, comminution is generally carried out by a plurality of knife sets arranged one behind the other, consisting of a perforated disc and a rotating knife arranged in front of it. The knives themselves are formed by knife holders having a plurality of arms projecting outwardly from a hub with knife blades attached, the knife blades extending parallel to the arms. The knives are clamped with a high contact pressure in the axial direction with the perforated discs in order to obtain a high cutting performance. This creates high frictional forces between the blades and the perforated disc. Perforated discs and knife blades wear out relatively quickly and the resulting metal abrasion gets into the sausage mass. To reduce these problems is in the DE 44 37 144 A1 a knife set has been proposed, in which the knife blades are arranged axially movable on the knife holder and are pressed by the working pressure of the material to be cut against the perforated disc. The knife holders no longer have to be preloaded axially against the perforated disks, whereby the friction losses can be noticeably reduced. A knife set according to the preamble of claim 1 is of GB 363,229 . US 1 889 381 and DE 577 208 known. The present invention has for its object to provide a blade set, in which the wear of the perforated discs and knife blades over the known solutions is further reduced.

The object is achieved by a knife set according to claim 1. The rotatably mounted knives, which in turn are moved along the perforated disk by the knife holder, result in significantly better cutting performance, as has been shown in experiments. The material to be cut is actually shredded to a significantly higher percentage in this knife set by cutting and not crushing than in known knife sets. This also results in less wear both the perforated disc and the knife. There is less metallic abrasion in the sausage meat. The drive power of the meat grinder can be reduced. Furthermore, less heat is generated by the friction between the knife blades and the perforated disc and thus less heating of the material to be cut, which benefits the sausage quality.

To achieve uniform coverage of the perforated disk by the rotatable blades, the axes of rotation of the blades may preferably be arranged on one or more circles about the shaft axis of the meat grinder. It is also advantageous if the blades each have the same angular distance.

In a preferred embodiment of the blade set, the blades are rotationally symmetrical. In particular, they can be round or polygonal. They can thereby easily and uniformly rotate through the cutting material held by the perforated disk, as they are moved along the perforated disk by the knife holder. In addition, the knives are easy to clean in this configuration. It is advantageous if the blades are provided with blades at their periphery. The resulting pressure distribution between knives and perforated disc is cheaper than in the radially outward blades of known sets of knives. The result is a sheet-like load of the disc instead of a linear load, which further reduces the deformation and thus the wear of the perforated disc. In addition, thinner perforated discs can be used than in known knife sets. The knife foot may preferably be round, while the blades may also be arranged, for example, on a polygon about the axis of rotation of the knife. According to the invention, the blades have a plurality of blades each provided with blades, the blades being disposed on the radially outer periphery of the blades. The wings can also have different lengths.

The blades may preferably form a cutting angle of 30 ° to 60 ° with the perforated disc. Very good results have been found in experiments with cutting angles of 45 °. On the other hand, in conventional knife sets, the cutting angles are significantly larger, which leads to poorer cutting results. The blades sharpen themselves during the cutting process on the harder perforated disc. Even with wear, the cutting angle is maintained.

Further advantages arise when the blades are arranged interchangeable by means of a plug connection to the knife holder. They can be easily replaced and cleaned.

It is particularly preferred if the blades are arranged axially movable in the knife holder. As a result, only a cutting action occurs when the material to be cut is pressed against the knife. The working pressure of the conveyed by a screw of the mincer cutting material is sufficient to produce a clean cutting action. If no material to be cut is fed, the friction between the perforated disc and the blade is minimal.

Even better cutting results and even lower wear can be achieved if the blades are mounted floating in the knife holder. As a result, the knife blades are always over the entire surface of the perforated disc during the cutting process, regardless of whether the knife holder and perforated disc are aligned exactly parallel to one another or not. This results in optimum cutting results, which is particularly important for the production of minced meat products, tartare or salami.

The knife holder may preferably be disc-shaped in order to ensure a flat and compact design of the knife set. The assembly of the knife set is thus easy. Particularly advantageous is an embodiment of the knife holder with a plurality of wings, on each of which at least one knife is arranged. The wings can be kept relatively narrow, so that the passage of the material to be cut to the perforated disc is hardly hindered by the knife holder.

Further advantages are obtained if the knife holder and / or the knives have openings for removing non-comminuted material to be cut. Such openings may be arranged, for example, near the axis of rotation of the knife or the knife holder. From there, the separated parts such as tendons or cartilage can be removed, for example via a tube, so that they do not clog the knife set.

If a high degree of comminution is to be achieved, then the knife set can comprise two perforated disks in a manner known per se with knife holders with knives arranged in front of it, wherein the perforated disks have an increasingly smaller hole diameter in the direction of passage of the material to be cut.

Hereinafter, a preferred embodiment of a blade set according to the invention will be described with reference to the drawings.

Fig. 1 shows a blade set 10, which in the example shown two perforated discs 12, 14, each with previously arranged knife holders 11, 13 has. The blade set 10 is on a shaft 15 a Meat grinder worm 16 is placed, wherein the knife holder 11, 13 are driven in rotation together with the worm 16. The perforated disks 12, 14 have in the example shown two radially spaced rows of holes 17, 18 and 19, 20.

The knife holders 11, 13 have three wings, of which two wings 21, 22 and 23, 24 can be seen in the side view. Each wing 21, 22, 23, 24 carries a knife 25, 26, 27, 28, whose shape and storage on the basis of the enlarged view of the knife holder 11 in Fig. 1 and based Fig. 2 be described in more detail. The wings 21, 22, 23, 24 are the same length in the example shown, and preferably each spaced by 120 ° from each other. The axes R ( Fig. 2 ) of the knives 25, 26, 27, 28 are therefore on a circle about the shaft axis W, so that the knives 25, 26, 27, 28 on the
Lines 17, 18, 19, 20 are moved away, when the knife holder 11, 13 rotate about the shaft axis W of the meat grinder. However, the knives 25, 26, 27, 28 could also be located on different circles. The Fig. 1 also clarifies that the knives 25, 26, 27, 28 are arranged in the unloaded state with a small axial distance a in front of the perforated discs 12, 14 when no cutting material is to be processed. The meat grinder with the knife set 10 according to the invention can therefore run wear-free even without material.

Fig. 2 illustrates the storage of the knives 25 to 28 in the knife holders 11, 13 using the example of the knife 26. The knife 26 has a round foot 29 which is inserted into a round through hole 30 in the wing 21 and there by a sealing ring 31 axially movable and rotatable is stored. The foot 29 may also perform limited tilting movements in the somewhat larger diameter bore 30 so that the knife 26 also is stored floating in the knife holder 11. Due to the simple plug connection between the knife 26 and the knife holder 11, easy assembly and exchangeability of the knife 26 is provided. The sealing ring 31 also prevents the ingress of meat pieces. The knife 26 also has a relief surface E whose size depends on the material to be cut.

The axial mobility allows pressing of the blade 26 by the transported in the direction of arrow 32 Schneidgut against the perforated disc 12. The floating bearing, the knife can thereby also fully rest against the perforated disc 11, if it is not exactly aligned parallel to the blade holder 11. Further, the material to be cut can set the knife 26 in rotation, resulting in a very good quality cut, as experiments have shown. The material held by the apertured disc 12 from the apertures 19, 20 is actually cut to a significantly higher percentage and not crushed by squeezing, as is the case with conventional knife sets.

As Fig. 3 shows, the knife 26 has three wings 33, 34, 35 which carry at their outer periphery respectively blades 36, 37, 38, which are provided in the example shown with a serrated edge. The blades 36, 37, 38 are circular arc-shaped and all have the same radial distance to the axis of rotation A of the knife 26th

The illustrated blade shape is merely exemplary. The shape of the knife 26 can be selected according to the material to be cut and the final product to be produced. By the simple Plug connection between the knife 26 and knife holder 11, the knife can be replaced quickly against other shape knife.
