Definitions

  • This invention relates to a capsule containing a dose of beverage ingredient for the preparation of beverages by means of a leaching process comprising at least a deflector in the inner side of the bottom wall (inlet wall).
  • the present invention relates to a beverage-preparation capsule comprising at least one floating deflector disposed inside the beverage ingredient thereof.
  • the invention can be used in those sectors that involve the design, manufacture, production or use of beverage-preparation capsules, such as, for example, the food industry, the beverage and tobacco industry, the chemical industry, the rubber and plastics industry, the metal-goods-manufacturing industry and the trade and hotel industry.
  • beverage-preparation capsules such as, for example, the food industry, the beverage and tobacco industry, the chemical industry, the rubber and plastics industry, the metal-goods-manufacturing industry and the trade and hotel industry.
  • infusion shall be understood as the action of extracting from a beverage base enclosing organic and inorganic ingredients as well as soluble parts in a fluid and habitually some insoluble ingredients drawn by such fluid by means of the leaching process at a brewining temperature higher than the room one. It should also be understood as an infusion the extracted leachate.
  • the present invention and its description as well as the leaching process describe the phenomenon in which a dissolving fluid gets in contact with a solid beverage base to completely disolve the said solid beverage base.
  • the preparation of infusions is carried out by means of a leaching process by which a fluid, usually hot water under the boiling point, goes through a beverage base consisting of a porous, granular or chopped material in such a way that a leachate is obtained, which partly or wholly extracts the beverage ingredient of the said infusion.
  • Tea, lime tea, chamomile, coffee, instant coffee or soup can be quoted as examples of infusions.
  • the XX century means a revolution in the food technology and in the logistics of materials as well as the first attempts to create capsules for infusions with the appropriate dose of beverage ingredient were also carried out therein.
  • the machines for the preparation of infusions using single-use capsules were developed and improved as known per se today.
  • the working principle of the abovementioned technology is based on a leaching process that employs hot pressurized water and a constant temperature utilizing a capsule containing a pre-established dose of beverage ingredient.
  • the machine perforates the single-use capsule and injects high pressure hot water until the leachate is released through the opposite side.
  • the utilization of single-use capsules makes the process quick and easy since the task of preparing the dose from the raw material is not needed anymore, sometimes such a task means grinding or crushing the ingredient to make the beverage base.
  • the result of the preparation of an infusion by means of the leaching process is different due to several factors.
  • the quality, pressure and temperature of the liquid, or the quality, amount, granulometry and compaction of the beverage base are decisive factors in the composition and organoleptic properties of the resulting leachate.
  • the devices that utilize single-use capsules for the preparation of beverages supply the liquid for the leaching process with constant pressure conditions between 15 and 25 bars and constant temperature close to the boiling point.
  • the compaction of the ingredient inside the capsule, its granulometry and quality cannot be modified by the user for the capsules are sealed and they can only be used once.
  • the single-use capsules that are utilized in the machines to prepare infusions are often fitted with a wall which is thinner on one side so that an internal increase of pressure tears the said surface area and the leachate is delivered.
  • the beverage ingredient contained in the said single-use capsules is compacted to fill a reduced space with an amount of beverage ingredient. Therefore, the liquid pressure borne by these type of machines for the preparation of encapsulated infusions is higher than the one borne by the traditional machines as the dose is prepared by the user thereof. In the second case, the pressures required are only close to 7 bars, whereas single-use capsule machine are usually over 15 bars. The utilization of these ranges of pressure makes the extraction in the path areas be effective but, in return, the amount of time the liquid remains on the beverage base is shorter, which reduces the aroma intensity, flavor, color and other physical-chemical properties of infusion.
  • Single-use capsules including reinforcing protrusions on the exterior of the sidewall in order to work as a guide for the insertion of the capsule in the beverage preparation unit, or to guide some of the liquid that runs outside the capsule as well as to guarantee the sealing therein, but without modifying the liquid path that goes through the inside thereof are known as per se in the state-of-the-art. An example of the latter is described in Patent WO 2010041179 .
  • Capsules are fitted with reinforcing protrusions on the inner side of the sidewall to make them stronger and to facilitate its storage and handling, as the ones shown in WO 2010041179 or WO 2011027259 , but although they can slightly deviate the liquid path that runs inside therein do not produce any significant alteration to the liquid nor they lead it effectively generating turbulences or nonlinear preferential flows as a deflector does.
  • the present invention refers to some capsules for the preparation of beverages, preferably by means of a leaching process comprising at least a deflector on the bottom wall (inlet wall) that pushes a portion of the leachate towards the center of the capsule making the length of the path as well as the amount of time inside the capsule longer.
  • the present invention also relates to a capsule for the preparation of beverages comprising at least a floating deflector disposed in the beverage ingredient.
  • a further object of the present invention is a capsule for the preparation of beverages comprising:
  • At least one wave-shaped deflector is disposed on the inner side of the bottom wall (inlet wall) of the capsule, in a continuous annular arrangement to push a portion of the leachate towards the center of the capsule.
  • the capsule is made of metal or of a metal alloy, or of plastic, or of fibers, or of cellulose material or of a mixture of the ones aforementioned.
  • Another object of the present invention relates to a capsule for the preparation of beverages, similar to the previous one, but with a wave-shaped deflector and laid out on the bottom wall (inlet wall), in a discontinuous annular arrangement.
  • a further object of the present invention relates to a capsule for the preparation of beverages, similar to the previous one, but the deflector comprises a deflection flat side forming an angle between 10 and 45° regarding a plane situated underneath the bottom wall (inlet wall) and perpendicular to the vertical axis that goes through the center of the top wall (delivery wall) and to the bottom wall (inlet wall).
  • the effectiveness of a deflector is conditioned by several factors, i.e. the angle of incidence of the configuration of the flow regarding the liquid current. On the whole, an excessively low angle means that the deviation of the current is not enough so the leachate thrust is reduced and ineffective.
  • the capsule comprises at least two deflectors that also provide a portion of the leachate with a rotating motion regarding the vertical axis.
  • the leaching liquid penetrates into the capsule through the bottom wall (inlet wall) at a high pressure impacting against the top wall (delivery wall) after going through a beverage base made up of ingredient.
  • the existence of one or several deflectors means that some of the liquid or leachate deviate from their vertical path towards the discharging unit disposed on the top wall (delivery wall) and returns towards the center of the capsule within a pre-established path allowing the amount of time for the preparation to be longer on the beverage base of the infusion and impacting and slowing down the main current and increasing the amount of time for the preparation all over the assembly.
  • the configuration and the number of deflectors make the amount of time for the preparation longer or shorter and additionally a larger volume is extracted, i.e.
  • the interference of the current of the deviated portion within the main current path also means that the leaching process is more intense as the liquid follows several preferred paths through the cavities disposed on the beverage base prior to be discharged through the top wall (delivery wall).
  • the deflector or deflectors also partly or wholly occupy the sidewall.
  • a further object of the present invention is a capsule for the preparation of beverages comprising:
  • the inner side of the bottom part of the capsule also consists of at least one deflector that thrusts a portion of the leachate towards the center of the capsule and also partly or wholly occupies the sidewall.
  • the capsules also comprise at least a floating deflector arranged inside the beverage ingredient in order to thrusts a portion of the leachate.
  • a floating deflector increases the retained amount of leachate inside the capsule as well as the amount of time for the preparation as the return of some of the leachate is more effective.
  • the floating deflector is fitted with orifices so that the nondeflected leachate that goes towards the capsule outlet can be discharged.
  • the capsules are fitted with several floating deflectors that increase even more the leachate torrent.
  • the floating deflector consists of edible or comsumable material, and most preferably soluble material.
  • the deflector or deflectors also partly or wholly occupy the sidewall.
  • An object of the present invention is a capsule for the preparation of beverages comprising:
  • the capsule comprises at least a floating deflector arranged inside the beverage ingredient that thrusts a portion of the leachate.
  • the capsule comprises several deflectors featuring similar technical characteristics which increase even more the thrust leachate torrent.
  • the capsule is made of metal or of a metal alloy, or of plastic, or of fibers, or of cellulose material or of a mixture of the ones aforementioned.
  • the floating deflector comprises a warping foil, a semispherical foil and a portion of a semisphere comprising a concave side looking towards the bottom wall (inlet wall).
  • the floating deflector is perforated to facilitate the flow of the liquid through it.
  • the floating deflector is made of edible or comsumable material.
  • edible or consumable material is understood as food approved material suitable for human consumption.
  • the edible material is soluble.
  • the capsules also comprise at least one side deflector on the sidewall that thrusts a leachate portion.
  • the capsules comprise several side deflectors.
  • the side deflector/s is/are arranged in a helical configuration regarding the capsule's vertical axis. The appropriate arrangement of one o several side deflectors prolong the amount of time the leachate is inside the capsule, as the return of some of the leachate is even more effective.
  • the capsules also comprise a radiofrequency identification system.
  • the identification system consists of a RFID tag.
  • the capsules also comprise an identification code.
  • the identification code consists of a barcode.
  • the identification code consists of a PDF417-type-bidimensional code.
  • the identification code consists of a QR-type-bidimensional code
  • the invention comprises several capsules for the preparation of beverages that prolong the amount of time of the leaching liquid on the beverage base for some similar pressure conditions of the liquid and beverage base permeability.
  • the beverage obtained by utilizing such capsules shows some more intense physical-chemical and organoleptic characteristics than the ones obtained by utilizing other types of capsules.
  • the quality and quantity of the leachate foam which is a basic priority for some infusions, say coffee, may be affected by the turbulent regime that is achieved during the decanting of the liquid through the capsule.
  • deflectors allow a greater choice in the design of such devices since for some conditions determined in the parameters for the preparation of the infusion it can be obtained a beverage practically similar to the one obtained utilizing a bigger capsule without deflectors.
  • the variation in the design of the defectors affects the amount of time for preparation, by which their arrangement inside the capsule and/or unimportant geometrical variations thereof provide a great diversity in the results, by offering consumer many possibilities.
  • deflectors provides a greater structural stiffness to the assembly achieving a stronger and more versatile capsule, which allows the utilization of not only more lightweight materials in its composition, but the implementation of more demanding working conditions.
  • identification systems such as codes and electromagnetic waves increases the amount of information provided to the end consumer regarding the encapsulated devices for the preparation of infusions known per se. Therefore, impaired people, say blind people, may enjoy the invention in an autonomous way.
