Claims (14)
- Cooking apparatus with a heat accumulator device (30, 30'), having a housing (2, 2') which can be closed by a door and comprises an inner chamber (3, 3', 5, 5') with a cooking chamber (3, 3'), at least one heating device (10, 21, 33, 33', 35, 35', 36, 36') for generating hot air and/or steam from a steam generator (20, 20') and a blower device (7, 7', 8, 8', 9, 9') for circulating hot air and/or steam in the cooking chamber (3, 3'), characterized in that the heat accumulator device (30, 30') comprises at least one storage vessel (31, 31') for at least temporarily accommodating a medium (34, 34') which is fluid at least above a specific temperature and at least one heat exchanger device (35, 35', 36, 36') into which at least some of the medium (34, 34') can be pumped at least intermittently and which extends into the inner chamber and into the steam generator (20, 20'), with the heating device (10, 21, 33, 33', 35, 35', 36, 36') comprising the heat exchanger device (35, 35', 36, 36').
- Cooking apparatus according to Claim 1, characterized by a first insulation means (11, 11') of the inner chamber (3, 3', 5, 5') and/or a second insulation means (32, 32') of the storage vessel (31, 31'), with the first and/or second insulation means preferably comprising a vacuum insulation means.
- Cooking apparatus according to Claim 1 or 2, characterized in that the heat exchanger device (35, 35', 36, 36') comprises at least three lines (37, 37', 37a, 37b, 37c, 37'a, 37'b, 37'c, 38, 38', 38a, 38b, 38c, 38'a, 38'b, 38'c), with a first line (37a, 37'a, 38a, 38'a) extending from the storage vessel (31, 31'), preferably via at least one pump (39, 40, 41'), into the inner chamber (3, 3', 5, 5') and/or into the steam generator (20, 20'), a second line (38c, 38'c) extending from the inner chamber (3, 3', 5, 5') into the storage vessel (31, 31'), and a third line (37c, 37'c) extending from the steam generator (20, 20') into the storage vessel (31, 31').
- Cooking apparatus according to Claim 3, characterized by at least one first shut-off element (42', 43') in the first line (37a, 37'a, 38a, 38'a), at least one second shut-off element in the second line and/or at least one third shut-off element in the third line, with the first and second or the first and third or the second and third or the first, second and third shut-off elements preferably being integrated in one unit and/or it being possible to jointly switch said shut-off elements.
- Cooking apparatus according to one of the preceding claims, characterized in that the heat exchanger device comprises two heat exchangers (35, 35', 36, 36'), of which one (36, 36') extends between the storage vessel (31, 31') and the inner chamber (3, 3', 5, 5') and the other (35, 35') extends between the storage vessel (31, 31') and the steam generator (20, 20').
- Cooking apparatus according to one of the preceding claims, characterized in that the heating device (10, 21, 33, 33', 35, 35', 36, 36') comprises a first heater (10) in the inner chamber (3, 5), which first heater is preferably arranged concentrically in relation to the impeller (7) of the blower device (7, 8, 9), a second heater (21) for the steam generator (20), which second heater is preferably arranged in the region of the water (22) in the steam generator (20), and/or a third heater (33, 33') for the storage vessel (31, 31'), which third heater is preferably arranged in the region of the storage medium (34, 34').
- Cooking apparatus according to one of Claims 3 to 6, characterized in that the heat exchanger device (36, 36') between the first and the second lines (37a, 37'a, 38a, 38'a, 38c, 38'c) runs concentrically in relation to the impeller (7, 7') of the blower device (7, 7', 8, 8', 9, 9'), preferably between the impeller (7) and the first heater (10).
- Cooking apparatus according to one of Claims 3 to 7, characterized in that the heat exchanger device (35, 35') between the first and the third lines (37a, 37'a, 38a, 38'a, 37c, 37'c) runs in the water (22, 22') of the steam generator (20, 20').
- Cooking apparatus according to one of Claims 6 to 8, characterized in that the first, second and/or third heaters or heater are/is connected to a primary heater, comprising at least one current source, at least one device for burning auxiliary materials and/or at least one external heat transfer medium, it preferably being possible for the waste heat from the first, second and/or third heater to be at least partially used by the primary heater.
- Cooking apparatus according to one of the preceding claims, characterized in that the storage vessel (31') comprises at least two regions (31'a, 31'b), it being possible to at least temporarily connect the regions (31'a, 31'b) to one another at least in regions preferably via a fourth shut-off element (44').
- Cooking apparatus according to Claim 10, characterized in that the third heater (33') and the first, second and third lines (37'a, 38'a, 37'c, 38'c) are connected to a region of the storage vessel (31').
- Cooking apparatus according to one of the preceding claims, characterized by a control and/or regulating device which is operatively connected to the heating device, preferably to the first, second and/or third heater, the blower device, the pump, the first shut-off element, the second shut-off element, the third shut-off element, the fourth shut-off element, at least one sensing unit, at least one input unit, at least one output unit, a modem and/or the Internet.
