Abstract

L'invention concerne un procédé et un système de transport et de traitement de carcasses latérales (100, 102) de carcasses de porc, transportées au moyen d'un convoyeur aérien (108, 110) possédant des crochets (104, 106) dont l'orientation n'est pas bloquée par rapport au sens de déplacement, par exemple des crochets du type « EURO Haken ». Les carcasses latérales sont dégagées des crochets du convoyeur aérien au niveau d'un poste de transfert et sont supportées temporairement par des moyens préhenseurs (114, 116) au niveau du poste de transfert, moyens préhenseurs bloquant les carcasses latérales. Les tendons sont coupés lorsque les carcasses latérales sont supportées par les moyens préhenseurs, et les doigts postérieurs peuvent être coupés automatiquement par les moyens préhenseurs déplaçant les articulations des talons des carcasses latérales au-delà des moyens de découpe (126, 128).
