  • the carrier surface 16 can be rotated to advantage according to a vertical centre axis by a drive system 17. In this manner, the product coming onto the surface 16 is rotated according to said vertical axis so that the blades (four in number for example and disposed at the vertices of a square) cut the wrapper along its periphery following a median line.

  • the belt 12 moves the product towards the cutting station discharging it onto the carrier surface 16.
  • the carrier surface 16 starts moving for bringing the product between the blades 19 so that said blades will be disposed alongside the product and in contact therewith.
  • the carrier surface 16 is then rotated by the drive system 17 and the blades carry out a continuous circumferential cut along the wrapper which is therefore divided into an upper half and a lower half.
  • the carrier surface 16 discharges the product onto the roller conveyor 20 which in turn discharges it onto the belt conveyor 22 of the heating chamber. Then the product passes through the heating chamber and this passage enables the wrapper resistance to removal to be reduced, since steam for example present in said chamber will causes jellies and fat (in the case of cooked items) or the ice layer (in the case of frozen items) to melt, thereby eliminating those substances that would keep the wrapper in adhesion relationship with the meat.
  • the lower rollers are such operated that they both rotate in the same clockwise direction thereby discharging the product free of its wrapper onto the outfeed line 31.
