Description

The present invention relates to a process for cutting into portions circular products, in particular food products by the use of ultrasound, as well as to a vibrating sonotrode for the commissioning of such a process.

It is known that the cutting into sectors in order to constitute portions in circular food products, such as in particular cakes for cheeses and the like is at present carried out using steel wires cutting successively and respectively a diameter of the product. One of the drawbacks of this known technique lies in the fact that it does not make it possible to produce an odd number of parts nor, to cut out portions of small dimensions cleanly because the center of the product which constitutes the meeting point of the different lines cutting made by the sharp wire is then the seat of a particularly unsightly area due to the fragility of the very acute angle at the center of the sectors thus cut, and no longer to reconstitute the entire product after cutting.

The invention proposes to provide improvements making it possible to remedy these drawbacks of the previous solutions.

Consequently, the subject of this invention is a method for cutting portions into portions in circular food products such as cakes, cheeses and the like, characterized in that it consists in making a small diameter hole in the center of said circular product using a tubular sonotrode-knife, then cut into sectors using any suitable cutting element.

The realization of a central hole, prior to cutting into sectors, obtained by any suitable conventional means, facilitates the cutting by eliminating the fragile and unsightly area located in the center of the product during the implementation of conventional methods of cutting into circular sectors portions of small dimensions. In addition, the use of a sonotrode to make the central hole makes it possible to obtain an aesthetic cutout and self-cleaning of the knife at each cycle.

The invention also relates to a sonotrode-knife for implementing the method defined above, characterized in that it is tubular in shape, in that it vibrates at a frequency of the order of 10 to 40 kHz and in that it comprises means ensuring the ejection of the carrot cut from said product during the production of the central hole.

According to an exemplary embodiment of the invention, said tubular sonotrode has a cutting end having an internal draft angle.

According to a second embodiment of the invention, the tubular sonotrode has a cutting end which has an external clearance angle.

- la première réalisée à l'aide de la sonotrode tubulaire que l'on fait descendre en vibrant dans la partie centrale du produit afin de réaliser un trou central sensiblement cylindrique, la sonotrode étant ensuite remontée en recevant un jet d'air pour éjecter la carotte cylindrique ainsi découpée et ;
The process which is the subject of the present invention for producing the central hole in the circular product which must then be cut into sectors comprises two operations:
- the first made using the tubular sonotrode which is lowered by vibrating into the central part of the product in order to produce a substantially cylindrical central hole, the sonotrode then being reassembled by receiving an air jet to eject the cylindrical core thus cut and;
- the second carried out using the same tubular sonotrode and under the same conditions as the first operation which makes it possible to obtain a perfectly cylindrical central hole.

- une première sonotrode tubulaire à angle de dépouille externe pour réaliser le trou central et obtenir une carotte parfaitement cylindrique et ;
According to a variant of the method according to the invention, the central plug or core is recovered to replace it in the bore immediately after the product has been cut into sectors so as to reconstitute the entirety of this product. According to this variant, the method uses two vibrating sonotrodes:
- A first tubular sonotrode with external clearance angle to make the central hole and obtain a perfectly cylindrical core and;
- a second sonotrode whose clearance angle is inverted with respect to that of the first sonotrode and whose external diameter is slightly larger than the internal diameter of the first sonotrode to perfectly bore the hole previously made, the carrot then being replaced in place in the central hole thus reamed, immediately after cutting the product into sectors.

  • - Les figures 1 à 5 sont des vues schématiques illustrant les différentes étapes d'un premier mode de mise en oeuvre du procédé objet de l'invention et ;
Other characteristics and advantages of this invention will emerge from the description given below with reference to the accompanying drawings which illustrate examples of implementation given without implied limitation. In the drawings:
  • - Figures 1 to 5 are schematic views illustrating the different stages of a first embodiment of the method of the invention and;
  • - Figures 6 to 9 are also schematic views which illustrate the different stages of the second mode of implementation of this method.

The examples of implementation described below apply to the cutting into circular sectors of a circular food product consisting of a cheese, such as in particular a tomme 2, placed on a plane 3 whose surface is pierced with a hole 4 whose axis corresponds to that of the central hole which one wishes to practice in the tomme 2, for then facilitate the cutting into portions of portions in the latter.

In the first embodiment of the method of the invention illustrated in FIGS. 1 to 5, a sonotrode-knife 1 of tubular shape is used, the cutting end 1 ′ of which has an internal draft angle as can be clearly seen on the drawing. Preferably, this sonotrode vibrates in wavelength or in half wavelength depending on the thickness of the product at a frequency of the order of 10 to 40 kHz, and its outside diameter is slightly less than the diameter of the hole 5 provided. in holder 3.

We start by positioning the sonotrode-knife 1 above the product 2 so that its axis is coaxial with that of the hole 4 of the support 3, which is itself arranged along the vertical axis of the product (Figure 1).

The sonotrode 1 is then lowered into vibration in the product 2 (Figure 2) and, during this operation the sonotrode 1 cuts a central hole 5 in the product by removing a volume (core 6) of material comparable to a plug.

La carotte 6 est éjectée au travers du trou 4 du support 3 comme on le voit sur la figure 3.In the following step (FIG. 3), the core 6 is ejected and the sonotrode 1 is withdrawn upwards, in its initial position. In the nonlimiting example of embodiment illustrated by the drawing, the ejection of the core 6 is obtained by projection of a jet of compressed air blown into the hollow central part 7 of the sonotrode 1 by a supply line 8 opening into this central part. The core 6 is ejected through the hole 4 of the support 3 as seen in FIG. 3.

At this stage of the process, a central hole 5 is produced in the product 2 having a very approximately cylindrical shape and constricted in the equatorial zone of the product.

Cette seconde opération est absolument identique à la première opération décrite ci-dessus en référence aux figures 1 à 3.During the following steps illustrated by FIGS. 4 and 5, the central hole 5 is conformed so as to give it a perfectly configuration cylindrical with an indisputable aesthetic appearance. This second operation is absolutely identical to the first operation described above with reference to Figures 1 to 3.

We therefore begin (Figure 4) by lowering the vibrating horn 1 into the product so as to cut a cylindrical core 9 centered on the axis of the hole 5 executed during the first operation, then the ejection of this core 9 is carried out when raising the sonotrode 1 (FIG. 5), as described above, by maintaining the vibration of the sonotrode and by a jet of compressed air.

Finally, a perfectly cylindrical hole 10 is obtained, making it very easy to cut into the product 2 portions in the form of sectors, even of small dimensions, using any conventional means, for example a sharp wire, the aesthetic appearance. portions being particularly attractive. Preferably this hole 10 has a diameter of the order of 10 to 30 mm in diameter.

In the variant implementation of the method according to the present invention illustrated by FIGS. 6 to 9, the same operations are carried out as those described above but, under conditions which allow the entire precut shape to be reconstituted, after cutting the product into sectors 2.

This second example of implementation uses two tubular sonotrodes of different shape.

During the first operation illustrated by FIGS. 6 to 8 and whose phases are identical to those of the first operation of the example of implementation described above (FIGS. 1 to 3), a vibrating sonotrode is used whose cutting end 11 ′ has an external clearance angle α. The sonotrode vibrates down into the product 2 to make the hole 5 ′. It was then reassembled still vibrating and the insufflation of the compressed air jet ensures the expulsion of the carrot or plug 6 ′. There is thus obtained in product 2 a cylindrical hole or housing 5 ′ whose dimensions and the surface condition does not allow the plug 6 ′ to be replaced in its place and place of origin.

This is the reason why a second sonotrode 12 is then used, the cutting end 12 ′ of which has a clearance angle α ′ inverted with respect to the clearance angle α of the sonotrode 11 previously used and whose external diameter D ′ Is slightly greater than the internal diameter D of the first sonotrode 11.

This second horn 12 is used during the second step of the method, illustrated in FIG. 9 and which is identical to the operation described above with reference to FIGS. 4 and 5.

This second step makes it possible to ream the hole 5 ′ previously made so as to finally obtain a central hole 10 ′ which has a perfectly cylindrical shape and which not only makes it possible to cut the product into sectors under the conditions described above and also replace the carrot or plug 5 ′ in the central hole 10 ′. It is thus possible to reconstruct, after cutting the product 2 into sectors, the entire pre-cut shape of the latter, which thus retains its original presentation and its attractive appearance.

It remains to be understood that this invention is not limited to the example of embodiment and implementation which has just been described but that it encompasses all variants thereof.

9. Method for cutting portions into sections in circular food products according to any one of claims 1 to 4 by using sonotrodes-knives according to any one of claims 5 to 8, characterized in that it puts using two vibrating horns (11, 12):
- a first tubular sonotrode (11) with external clearance angle (α) in order to produce a central hole (5 ′) of substantially cylindrical shape and;
- a second tubular sonotrode (12) whose clearance angle (α ′) is reversed relative to that (α) of the first sonotrode (11) and whose external diameter (D ′) is slightly larger than the diameter internal (D) of the first sonotrode (11) in order to perfectly bore the hole previously made, the core or plug (6 ′) coming from the realization of the hole (5 ′) then being replaced in the central hole (10 ′) Thus reamed, immediately after cutting the product into sectors, in order to reconstitute all of it.
