Изобретение относится к медицинской микробиологии и представляет собой консорциум штаммов бифидобактерий пяти видов, который может быть использован для приготовления кисломолочных, неферментированных пищевых продуктов и бактерийных препаратов. Консорциум получен путем сочетания штаммов пяти видов бифидобактерий - В.bifidum 791, B.longum B379M, B.breve 79-119, B.infantis 73-15, B.adolescentis Г7513, имеющих близкие культуральные и физиолого-биохимические свойства, а также обладающих сквашивающей активностью. Предлагаемый консорциум штаммов пяти видов бифидобактерий активно размножается в питательных средах с накоплением производственной биомассы в короткие сроки культивирования; сквашивает молоко с образованием сгустка с хорошими вкусовыми и органолептическими свойствами; обладает специфической активностью. Консорциум штаммов можно рекомендовать в составе заквасок для приготовления кисломолочных лечебно-диетических продуктов, неферментированных пищевых продуктов и бактерийных препаратов.The invention relates to medical Microbiology and is a consortium of strains of five types of bifidobacteria, which can be used for the preparation of fermented milk, non-fermented foods and bacterial preparations.
