Claims (11)
1. Fremgangsmåde til fremstilling af laktosefrie mælkeprodukter, hvor (a) skummetmælk udsættes for en ultrafiltrering eller for en kombination af dia- og ultrafiltrering, (b) det laktosefrie retentat RI ledes til en lagringsbeholder og det laktoseindeholdende permeat PI ledes til en enzymreaktor, (c) en mængde af laktase tilstrækkelig til den enzymatiske nedbrydning af laktosen til stede deri tilsættes til permeatet PI, (d) reaktionsblandingen opnået på denne måde udsættes for en nanofiltrering, (e) det laktosefrie permeat P2 ledes til lagringsbeholderen og blandes med det laktosefrie retentat RI, og (f) retentatet R2, som stadig omfatter ikke-reageret laktose og enzym, tilbageføres til enzymreaktoren.
2. Fremgangsmåde ifølge krav 1, kendetegnet ved, at den udføres enten kontinuert eller diskontinuert.
3. Fremgangsmåde ifølge kravene 1 og/eller 2, kendetegnet ved, at ultrafiltreringen af skummetmælken udføres med en membran fremstillet af rustfrit stål, polymermaterialer, keramik, aluminiumoxid eller tekstiler.
4. Fremgangsmåde ifølge mindst ét af kravene 1 til 3, kendetegnet ved, at ultrafiltreringen af skummetmælken udføres med membraner, der har en porediameter på 1000 til 50000 Dalton.
5. Fremgangsmåde ifølge mindst ét af kravene 1 til 4, kendetegnet ved, at ultrafiltreringen af skummetmælken udføres ved temperaturer i området fra 4 til 55 °C.
6. Fremgangsmåde ifølge mindst ét af kravene 1 til 5, kendetegnet ved, at den enzymatiske nedbrydning af laktose indeholdt i permeat PI udføres ved en enzymkoncentration på fra 180000 til 250000 FCC-enheder af laktase per kg af laktose, som skal reageres.
7. Fremgangsmåde ifølge mindst ét af kravene 1 til 6, kendetegnet ved, at den enzymatiske nedbrydning af laktose indeholdt i permeat PI udføres ved en temperatur i området fra 23 til 27 °C.
8. Fremgangsmåde ifølge mindst ét af kravene 1 til 7, kendetegnet ved, at den enzymatiske nedbrydning af laktose indeholdt i permeat PI udføres ved en pH i området fra 6 til 7.
9. Fremgangsmåde ifølge mindst ét af kravene 1 til 8, kendetegnet ved, at nanofiltreringen af hydrolyseproduktet udføres med en membran fremstillet af rustfrit stål, polymermaterialer, keramik, aluminiumoxid eller tekstiler.
10. Fremgangsmåde ifølge mindst ét af kravene 1 til 9, kendetegnet ved, at nanofiltreringen af hydrolyseproduktet udføres med membraner, der har en porediameter på fra 100 til 2000 Dalton.
11. Fremgangsmåde ifølge mindst ét af kravene 1 til 10, kendetegnet ved, at nanofiltreringen af hydrolyseproduktet udføres ved temperaturer i området fra 4 til 55 °C.
