Claims (10)

1. Isoleret polypeptid med endopeptidaseaktivitet, der er udvalgt fra gruppen, som består af: (a) et polypeptid, som udviser mindst 70% sekvensidentitet med det modne polypeptid ifølge SEQ ID NO: 2; (b) et polypeptid, der kodes for af et polynukleotid, som udviser mindst 70% sekvensidentitet med det modne polypeptids kodningssekvens ifølge SEQ ID NO: 1; og (c) et fragment af et polypeptid ifølge (a) eller (b), der har endopeptidaseaktivitet.
2. Polypeptid ifølge krav 1, som udviser mindst 75%, mindst 80%, mindst 85%, mindst 90%, mindst 95%, mindst 96%, mindst 97%, mindst 98%, mindst 99% eller 100% sekvensidentitet med det modne polypeptid ifølge SEQ ID NO: 2.
3. Polypeptid ifølge et hvilket som helst af kravene 1-2, som kodes for af et polynukleotid, som udviser mindst 75%, mindst 80%, mindst 85%, mindst 90%, mindst 95%, mindst 96%, mindst 97%, mindst 98%, mindst 99% eller 100% sekvensidentitet med det modne polypeptids kodningssekvens ifølge SEQ ID NO: 1.
4. Polypeptid ifølge et hvilket som helst af kravene 1-3, der omfatter eller består af SEQ ID NO: 2.
5. Polypeptid ifølge et hvilket som helst af kravene 1-4, der kodes for af polynukleotidet, som er indeholdt i plasmid ExpVec8, der er indeholdt i E. coli DSM 23706.
6. Sammensætning, som omfatter polypeptidet ifølge et hvilket som helst af kravene 1-5.
7. Fremgangsmåde til fremstilling af polypeptidet ifølge et hvilket som helst af kravene 1-5, hvilken fremgangsmåde omfatter: (a) dyrkning af en rekombinant værtscelle, som omfatter et polynukleotid, der koder for polypeptidet ifølge et hvilket som helst af kravene 1-5, og som er operativt forbundet til en eller flere kontrolsekvenser, der styrer fremstillingen af polypeptidet under betingelser, som er befordrende for fremstilling af polypeptidet; og (b) indvinding af polypeptidet.
8. Anvendelse af polypeptidet ifølge et hvilket som helst af kravene 1-5 til fremstilling af et proteinhydrolysat.
9. Fremgangsmåde til fremstilling af et proteinhydrolysat, hvilken fremgangsmåde omfatter: (a) tilvejebringelse af en opløsning, som omfatter protein, der skal hydrolyseres; (b) tilsætning af polypeptidet ifølge et hvilket som helst af kravene 1-5 til opløsningen og (c) opnåelse af proteinhydrolysatet.
10. Fremgangsmåde ifølge krav 9, hvor proteinet, der skal hydrolyseres, er fødevareprotein.
