Demgemäss betrifft die vorliegende Erfindung ein Verfahren zur Herstellung von Eiweiss aus Wassertieren, das sich dadurch auszeichnet, dass das Ausgangsgut in bekannter Weise mit verdünnten Säuren, z.B. nach dem DRP 686 326, aufgeschlossen, gewaschen, von der Hauptmenge des Wasser auf mechanischem Wege befreit, mit einem wasserhaltigen organischen Fettlösungsmittel behandelt, das Eiweiss darauf mit verdünnter Lauge in Lösung gebracht, auf ein p(sub)H von etwa 7 bis 8 neutralisiert und die Lösung schonend, d.h. bei niederer Temperatur und in kurzer Zeit, zweckmässig durch Zerstäubungstrocknung, bis auf einen Wassergehalt von etwa 2 bis 10% vom Wasser befreit wird. Es hat sich als notwendig erwiesen, dass der Wassergehalt des Eiweisses während des gesamten Behandlungsvorganges auf etwa 5 bis 30%, zweckmässig auf etwa 15 bis 20%, gehalten wird. Man kann für die Extraktion ein wasserhaltiges, z.B. ein wasserlösliches Lösungsmittel wie 94%igen Alkohol verwenden. Wenn man ein praktisch wasserunlösliches Fettlösungsmittel benutzt, muss man während der Extraktion ständig Wasser, z.B. in Form von Wasserdampf, zufügen. Auch kann man ein Gemisch von einem wasserlöslichen und einem wasserunlöslichem Lösungsmittel benutzen.
