Der genaue Mechanismus dieser Reaktion ist nicht bekannt. Man kann annehmen, daß das Glycerin dehydratisiert wird und das dadurch entstehende Aerolein oder ein Dimer desselben mit dem überschüssigen Alkali reagiert. Man verwendet das Verseifungsmittel, insbesondere NaOH, im Ilberschuß über die Menge, die zur Verseifung des Fettes oder der Fettsäure und zur Reaktion mit dem Glycerin oder dessen Zerfallsprodukten notwendig ist.
