Process for the production of easily digestible, highly swellable
Protein from milk It is well known that the protein from skimmed milk is made with the help of rennet
or precipitated by acidification and put on the market as casein. The protein
Can hardly be dueled in this form and is consequently affected by the human organism
absorbed only with difficulty and slowly; it must first be converted into the soluble form in the stomach
so that the desired degradation to the amino acids can then begin.
A protein that is quickly absorbed and used by the organism can be obtained according to patent 100 977 by converting the acid-precipitated protein from milk with sodium bicarbonate at an elevated temperature into sodium caseinate and then drying it. By mixing the casein with the illkalil> icarl) onat a slimy, sticky and stringy mass is created, which is spread on substrates to dry. This spreading must be done in a very thin layer, since with a thick layer the drying proceeds only very slowly and, moreover, very hard parts are formed which are difficult to convert into the powder form in which the product is sold. So this process turns out to be quite difficult and expensive to carry out, even if it provides a usable protein preparation.
The invention now aims to obtain protein with a high level of absorbability
from milk in a simple, easy to perform in all its operations
Procedure to enable. This object is achieved according to the invention
Reason obtained through in-depth experiments
Realizing that both
for the water content as well as for the structure of the organic or inorganic
Acids from milk precipitated and neutralized with an alkali bicarbonate protein
the conditions that are met during the felling process are decisive. It has
it has been shown that if the protein precipitation occurs at a certain temperature

The pH value maintained during the precipitation plays an important role, especially for

In putting these findings into practice, according to the invention
for the production of easily digestible, highly swellable protein from milk using
an acid for precipitation and an alkali bicarbonate for further treatment in the
Proceed in a way that the protein precipitation from the milk by means of acid at a
Temperature between 6o to 65 ° C. Furthermore, a pH value is preferably used here
of about 4 by appropriately measuring the amount added for protein precipitation of the milk
Amount of acid adhered to. The precipitation carried out under these conditions gives
a product that not only has a low water content of around 55%,
but that can also be easily done with the help of a grinder after removing the main amount
of the adhering water can give a fine crumb structure, which also applies to the
subsequent mixing with Alkalili carbonate is not lost.
This crumb structure is also used for the drying of the product
extremely favorable, as they have a large inner surface for the whole to be dried
Mass guaranteed and this prevents keratinization when drying, so that the
Drying takes place very quickly and with the lowest possible heat consumption. Has
proved to be advantageous according to the invention to carry out the drying in such a way that
a temperature until the majority of the water is removed from the crumbly mass
of 5o ° C and only then the temperature is increased. example
rooo 1 skimmed milk are warmed to 63 ° C and then 2.51 35% hydrochloric acid
added vigorous stirring, the casein in the form of a slightly balled up
Mass fails. This results in 65 kg of casein with a dry matter content of
4211 / o received. After most of the adhering water has been removed, it becomes
the casein is crushed into fine crumbs in a mill or other grinding device
and in a trough the crumbly pale mixed intimately with 1.95 kg of sodium bicarbonate,
so that the mixture has a pH of;, 2. The product thus obtained is
now spread out on drying trays in a thin layer and at an initial temperature
dried at 45 ° C. which is increased to 80 ° C after r hour. After 2 hours
the drying is finished, whereupon the dry mass is ground on a roller mill
will. The product obtained in this way is easy to digest and
a very high level of water and other liquids.
