Teigsäuerungsmittels Es ist bekannt, Säuerungsmittel für Roggenbrotteig dadurch
herzustellen, daß man eine Bakteriengärfiüssigkeit mit Hilfe der Säurebakterien
des natürlichen Sauerteigs gären läßt und die Flüssigkeit durch aufgeschlossen:es
Getreidemehl aufsaugen läßt, worauf d'as Erzeugnis vorsichtig getrocknet wird. Es
sind weiterhin. auch: Verfahren zum Herstellen seines sogenannten Dünnsauers bekannt;
d. h. einer dünnen. zum unmittelbaren Bereiten von Roggen- oder Roggenmischbrot
ohne bakterielle Säuerung und ohne Hefezusatz dienenden Flüssigkeit, wobei eine
Nährflüssigkeit unter Zugabe von Sauerteig bzw. einer Sauerteigreinkultur seiner
zweistufigen Gärung unterworfen wird. In der ersten Stufe wird hierbei durch: Innehaltungeiner
Temperatur von etwa 32 bis 35° die Säuerung hervorgerufen, während in der
zweiten Stufe bei einer Temperatur von 24 bis 28' die Hefevergärung durchgeführt

Die vorliegende Erfindung betrifft nun ebenfalls ein Verfahren zum

und essigsäurearmen, vorzugsweise durch Gärung bei 45 bis 5o° mit Säurebakterien
erhaltenen, hochqueZl'baren Trockensauer von hohem Säuregrad einen @esgigsäurereichen,
vorzugsweise durch Endvergärung bei 3o bis 35° erhaltenen Düfnsäuer aufsaugen läßt
und das ganze zu einem krümeligen oder feuchtkrümeligen Erzeugnis mit begrenztem
Essigsäuregehalt verarbeitet, zweckmäßig in einem solchen Verhältnis, daß der Anteil
der Essigsäure an der Gesamtsäure des Teigsäuerungsmittels nicht mehr als i 5 %

von Haus aus so viel Diastare, daß neben der Erieugung des für die Säurebildung
nötigen Zuckers auch noch genügend für die Geschmaclibiddt;nj caichtige Abbaustoffe
aus Kohlehydraten und Eiweißkörpern entstehen. Gegebcnc:nfalis kann der Diastasegehalt
durch Zusatz von ',Ialzinehlen oder auswuchshaltigen G,treid-ineli'en erhöht werden.
Die Endvergäruns ist in der Regel in 12 bis 16 Stunden erreicht. Danach werden der
säurehaltigeil Suspension noch weitere io bis 2o0,'o Mehl hinzugesetzt, so daß die
gesamte Suspension etwa 15 bis 3o% Trockensubstanz enthält. Diese Mischung wird
dann rasch getrocknet, zum Beispiel auf Walzentrocknern bzw. Zerstäubt;i,gstrocknern.
Zueckmäßig wird dabei zum mindesten ein Teil der Stärke der Getreideinelilc in Quellstärke
übergeführt. Um den Trocknungsvorgang zu erleichtern und die Suspension nicht in
Form einer reimen Suspension, sondern mehr in -einem dünnen, teigigen Zustand zu
erhalten, ist es von Vorteil, wenn ein Teil des zu vergärenden oder zugesetzten
Mehles von vornherein in aufgeschlossener Form angewendet wird. Das getrocknete
Produkt ist reich an Milchsäure. Von der Gesamtsäure sind nur ganz wenige Prozente
(1 bis 50'o ) in Form von Essigsäure Der Säuregrad des Trockenproduktes ist
abhängig von dem Verhältnis der angewendet::n Menge Mehl zu der angewendeten Menge
Nasser. Je geringen der Mehlanteil in der Suspension ist, desto höher ist der Säuregrad
des Trockenproduktes. Auf diese Weise kann der Säuregehalt des erhaltenen Trockenprodrytes
z. B. auf 6o bis loo Säuregrade gebracht werden. Zur Erreichung höherer Säuregrade
in dem Trokkenprodukt kann vor dem Trocknen der gesäuerten und mit dem Restmehl
vermischten Suspension eine weitere Säuregärung unter Zusatz von Sauerteigbakterien
bei 3o bis 35'
eingescba?tet werden. Die bereits vorhan,-dene Milchsäure wirkt
