kann das Bier leicht krank werden, d. h. es wird trübe und ungenießbar, und zwar
aus dem einfachem. Grunde, weil das Wachstum der Bakterien schwer regelbar ist und

gen, werden nach der Erfindung
zu beseitig
nicht die obengenannten Mikroorganismen,
wie z. B. Bast. delbrücki, sondern Strepto-
coeeus eremcri.s oder lactisoder ähnliche Arten
Bakterienpräparate, die als sog. Säurewecker in
der Milchwirtschaft bekannt sind, verwendet.
Durch die Anwendung solcher Bakterien-
präparate, die leicht hersteldbar sind, wird eine
viel schvrächere Säuerung erreicht, die leicht
kontrollierbar ist und wobei das Wachstum
dieser NLilchsäuzebakterien leicht abgestoppt
werden kamt, sobald die Gärung in genügen-
der @Ä>'eise fortgeschritten ist. Hierzu genügt
es, iRopfen zuzugeben, der. praktisch die Ei'n-
st'e,Llung des Wa'chsturSl-y--wirht. Dadurch wird
das Getränk niemals ungenießh,r oder trübe.
Durch den Gehalt wii ufder physiolog-dscher
Milchsäure wirkt sich das Getränk auf die
Verdauungsarygane äußerst günstig aus, ist
gut 'bekömmlich und dabei ee,ohi.schmeckend.
Dauergetränke, also Getränke, die lange halt-
bar bleiben ,müssen, können durch sterile Ab-
füllung oder Pa:steurisation erhalten- ,werden.
Um ein Getränk gemäß dem Verfahren
vorliegender .Erfindung herzustellen, werden
den Malzwürzen, Zuckerlösungen o. dgl. bzw.
Gemischen Von MalzwÜrzen, Zuckerl'ösung'en
a. dgl. Präparate von Streptococcus cremoris,
lactis oder ähnlichen bzw. deren Mischkulturen zugesetzt, einer
Gärung unterzogen und gleichzeitig bzw. oder nachfolgend erst die alkoholische Hefegärung
oder die Kohlensäureimprägniexung durchgeführt. An einigen he. sonderen Beispielen
sei das vorstehende Verfahren erörtert, und zwar wird hergestellt: i. Bier lach
einem der gebräuchlichen Verfaltrctt wird ein Sud. hergestellt mit dem Unterschied,
daß vor der Zugabe r-on Hopfe-tt aus der Sudpfanne ein Teil der noch ungehopften
Würze, z. B. ein Viertel, über den Kühlapparat in den Gäfkeller abgelassen wird.
