Die Neuerung betrifft eine Aufhängung für Räucherwaren. Um Räucherwaren in den Rauch zu hängen hat man bisher hölzerne Stangen verwendet, welche den Nachteil aufweisen, daß die Räucherwaren, insbesondere zu räuchernde Würste, verhältnismäßig umständlich auf den Stangen aufgefädelt werden mußten. Der beim Räuchern entstehende fettige, schwarze Belag der Holzstangen läßt sich nur ungenügend entfernen, so daß die Räucherwaren häufig schwarze Druckstellen aufwiesen. Beim Einhängen der Stangen in die Räucherkammer- oder- dergleichen ließ ©s sich nicht vermeiden, daß einzelne der zu räuchernden Fleischwaren sich gegenseitig berühren, wodurch an den Räucherwaren blasse Stellen entstanden, welche dem Rauch nicht oder nur ungenügend ausgesetzt waren. Schließlich weisen hölzerne Stangen noch den Nachteil auf, daß sie durch die Einwirkung der Hitze allmählich ihre Festigkeit verlieren, so daß es nicht zu vermeiden ist, daß gelegentlich solche Stangen unter dem Einfluß des Gewichtes der Räucherwaren brechen, so daß die zu räuchernden Waren in die Flamme stürzen ein Auflodern der Flamme verursachen und dadurch den gesamten Inhalt der Räucherkammer verderben.The innovation concerns a suspension for smoked goods.
