Verfahren zur Entsäuerung von Fetten und Ölen Es ist bekannt, bei
der Raffination von Fetten die Entsäuerung statt mit Alkalien mit Alkohol auszuführen.
Da Alkohol Fettsäuren, nicht aber Neutralfette, wenigstens unter normalen Umständen,
löst, erscheint ein Erfolg dieses Verfahrens nicht ausgeschlossen. In der Praxis
stellen sich aber Schwierigkeiten ein, da das Lösungsvermögen von fettsäurehaltigem
Alkohol für Neutralfette beträchtlich größer ist als das des reinen Alkohols, und
umgekehrt hält das zurückbleibende Neutralfett hartnäckig Fettsäure fest. Je fettsäurereicher
das zu raffinierende Fett ist, desto ausgeprägter machen sich diese Erscheinungen
geltend. So löst sich ein Fett mit etwa 40 % freier Fettsäure vollkommen klar in
92prozentigem Alkohol, aber auch Fette mit nur 20 % freier Fettsäure sind, wenn
auch nicht vollkommen, zu erheblichem Teil in Alkohol der angegebenen Stärke löslich.
Die Ausbeute an raffiniertem Fett wird durch dieses Verhalten stark verringert,
und außerdem enthalten die als Abfallprodukt zu betrachtenden extrahierten Fettsäuren
beträchtliche Mengen Neutralfett. Durch Verdünnen des Alkohols mit Wasser kann man
zwar diese Nachteile teilweise vermeiden; es hat aber den Nachteil, daß das spezifische
Gewicht des Alkohols sich dadurch vergrößert und dem der zu reinigenden Fette stark
nähert, wodurch die Trennung der Schichten erschwert wird und Emulsionen auftreten.
Das vorliegende Verfahren gestattet die Verwendung hochkonzentrierten Alkohols,
indem es letzterem einen Zusatz von Glycerin gibt. Glycerin ist mit Alkohol in jedem
Verhältnis mischbar und bewirkt, daß die Lösungsfähigkeit des Alkohols für Neutralfett
herabgesetzt wird, was aus folgendem Beispiel hervorgeht. Versetzt man 120 g einer
Sojafettsäure mit der S. Z. von 12o, die also etwa 6o % freie Fettsäure enthält,
mit i 6o g käuflichem Spiritus (etwa 92,5 0,7o Alkohol enthaltend), so löst
sie sich darin schon in der Kälte vollkommen auf. Nach Zusatz von 8o g Glycerin
(etwa 88 % Reinglycerin enthaltend) tritt Trennung in zwei Schichten ein, deren
untere die Hauptmenge der Lösungsmittel und viel Fettsäure neben wenig Neutralfett
enthält, während die obere aus wenig Spiritus und-einem Fettgemenge besteht, dessen
Fettsäuregehalt gegenüber dem Ausgangsfett um etwa 1/3 verringert ist. Ein Erwärmen
beschleunigt den Vorgang, ist aber nicht unbedingt erforderlich. Durch Wiederholung
der Behandlung der oberen Schicht mit neuen Mengen Alkohol-Glycerin kann man den
Fettsäuregehalt beliebig herabsetzen. Selbstverständlich kann man auch so verfahren,
daß man von Anfang an gleich eine größere Menge des Gemisches in Anwendung bringt.
Ebenso ist natürlich das umgekehrte Vorgehen, nämlich wiederholte Behandlung mit
kleinen Mengen des Gemisches in einer Extraktionskolonne
oder einem

Ausführungsbeispiel i ioo kg Sulfurolivenöl (S. Z. = 115) werden mit
i 3 5 kg käuflichem Spiritus (etwa 92,6prozentig) und 65 kg Glycerin (etwa 88prozentig)
bei gewöhnlicher Temperatur innig vermischt. Nach kurzem Absetzen wird die abgetrennte
obere Fettschicht -erneut mit der gleichen Mischung behandelt und diese Operation
so oft wiederholt, bis die Säurezahl des Sulfurolivenöls auf etwa 28 gesunken ist.
Die zurückbleibende obere Fettschicht wird von etwa gelösten Restmengen Alkohol
durch Erhitzen befreit. Die gesammelten unteren Fettsäure-Glycerin-Alkohol-Lösungen
werden gleichfalls durch Destillation von Alkohol befreit. Dabei trennt sich der
verbleibende Rückstand selbständig in zwei Schichten, deren untere fast quantitativ
das angewendete Glycerin enthält, während die obere aus der in Glycerin unlöslichen
Fettsäure besteht. Der Fettsäuregehalt dieser oberen Schicht beträgt mindestens
8o bis 85 %. Das Glycerin kann unmittelbar nach Zugabe von dem durch Destillation
wiedergewonnenen Alkohol für eine neue Operation Verwendung finden. Die Ausbeute
an Neutralfett beträgt etwa 3o kg, so daß also fast die gesamte in dem Ausgangsfett
vorhandene Neutralfettmenge wiedergewonnen wird.Embodiment 100 kg of sulfur olive oil (S. Z. = 115) are with

am Schluß eine Waschung mit ioo kg Spiritus allein folgen. Die in gleicher Weise
wie im Ausführungsbeispiel i erhaltene Oberschicht, welche noch etwa i o % freie
Fettsäure enthält, wird durch eine Laugenraffmation in üblicher Weise von den restlichen
