Verfahren zur Herstellung von Vanillestaubzucker Die Erfindung betrifft
ein Verfahren zur Herstellung von Vanillestaubzucker. Die irr Handel vorkommenden
Vanillezucker bestehen entweder aus Gemischen von Vanillin und Zucker, aus mit alkoholischem
Auszug von Vanille getränktem Zucker oder aus einem mehr oder weniger groben Gemisch
von mit Zucker zerstoßener Vanille. Die' damit be-. handelten Waren, wie Sahne,
Creme, Eis usw., nehmen dadurch oft eine gelbe Farbe an und haben einen bitteren
Nachgeschmack: Ein anderes bekanntes Verfahren zur Herstellung von Vanillezucker
besteht darin, daß Vanilleschoten getrocknet und zusammen mit Zucker fein vermahlen
werden, worauf dieses Gemisch in einem luftdichten Kasten längere Zeit stark erwärmt,
alsdann gesiebt, der im Sieb verbleibende Teil nochmals vermahlen wird und schließlich
beide Produkte wieder gemischt und gesiebt werden. Dieses Verfahren ist umständlich
und ergibt auch keinen einwandfreien Vanillestaubzucker. Die Erfahrung hat gezeigt,
daß Vanilleschoten nach dem Trocknen holzig werden und an Aroma einbüßen. Das beanspruchte
Verfahren zur Herstellung von Vanillestaubzucker durch Vermischen von Vanille und
Zucker unterscheidet sich von den bekannten Verfahren in mehrfacher Weise; es ist
wesentlich einfacher, und die Erhaltung des Aromas ist weitgehend gewahrt, die damit
behandelten Nahrungsmittel sind wohlschmeckend und ungefärbt. Gemäß der Erfindung
werden zuerst ganze Vanilleschoten, ohne vorher getrocknet zu werden, auf einer
geeigneten Mahlmaschine zu Staub zermahlen und mit Zucker und Glukose innig vermischt;
das Gemisch wird durch Erhitzen zusammengehalten und nach dem Erkalten staubfein
zermahlen. Zweckmäßig geht man jedoch so vor, daß man die zermahlene Vanille dadurch
mit dem Zucker-Glukose-Gemisch vereinigt, indem man sie kurz vor Beendigung des
Erhitzers einrührt. Dies hat den Vorteil, daß die Einzelbestandteile der Vanille
von der zähen Zuckermasse sofort luftdicht umschlossen werden, wodurch ein Verfluchten
des Aromas verhindert und ein außerordentlich inniges Anhaften an dem Zucker erreicht

verzeichnen ist. Etwaige Feuchtigkeit der Vanilleschoten ist für den Vermahlungsprozeß
nicbt nachteilig, da während der Beanspruchung durch die Mahlscheiben eine geringe
