Description

Rührwerke für Molkereizwecke, welche aus mehreren getrennten Rohrsystemen bestehen, die unabhängig voneinander von besonderen Temperierflüssigkeiten durchflossen werden, sind bekannt. Es ist auch bekannt, den Ein- und Austritt der Temperierflüssigkeiten durch die hohlen Zapfen des Rührwerkes zu führen. Es hat sich jedoch gezeigt, daß man, wenn man den Wasser- und Soleweg parallel durch das Rührwerk führt, also durch den einen Zapfen Wasser und Sole eintreten und durch den anderen Zapfen Wasser und Sole austreten läßt, Gefahr läuft, daß das Wasser durch die nebenherfließende, nur durch eine metallene Scheidewand getrennte, tiefgekühlte Sole zum Gefrieren gebracht wird und dadurch der Wasserdurchfluß durch das Rührwerk verhindert wird. Dieser Fall tritt insbesondere dann ein, wenn der Behälter aus irgendeinem Grunde nicht ganz gefüllt, also ao das Rührwerk nicht ganz mit Flüssigkeit bedeckt ist. Diese Gefahr läßt sich dadurch vermeiden, daß man, anstatt wie normal, Wasser und Sole parallel zu leiten, durch den einen Zapfen das Wasser und durch den anderen Zapfen die Sole ein- und austreten läßt. Wasser und Sole bilden dann jedes einen geschlossenen Kreis, die nur an den beiden kurzen Verbindungsstellen der beiden Rohrsysteme miteinander in Berührung kommen. Um die größtmögliche Sicherheit gegen Gefrieren des Wassers zu haben, kann an dieser Verbindungsstelle noch ein mit Luft gefüllter Hohlraum ausgespart oder eine sonstige Isolierung angebracht werden. Die Zeichnung stellt in Abb. 1 einen Schnitt durch die Wanne und das Rührwerk dar, in Abb. 2 eine schematische Darstellung des Wasser- und Soleweges in dem Rührwerk. Das Rührwerk besteht aus zwei gabelförmigen Verteilungsbacken, zwischen denen parallel verlaufende Heiz- und Kühlrohre angeordnet sind, wobei das linke Rohrsystem von Sole, das rechte Rohrsystem von Wasser durchflossen wird. Hierbei bedeutet α den wannenförmigen Behälter, b das gabelförmige Rührwerk, das in zwei Lagern c ruht und eine hin- und herschwingende Bewegung ausführt, d sind mit Luft gefüllte Kammern, die eine Isolierung zwischen dem mit Sole und dem mit Wasser gefüllten Rohrsystem bewirken.Agitators for dairy purposes, which consist of several separate pipe systems through which special heat-transfer liquids flow independently of one another, are known.
