Prozentsatz vor sich g e. 'ht, - so daß es gelingt, t' eine gleichmäßige
Menge der Fermente fabrikatorisch herzustellen, und außerdem haben die nach diesem
Verfahren dargestellten Fermente, z. B. die proteolytischen Fermente, je nach der
Auswahl des Nährbodens denjenigen Charakter, den man zu erhalten wünscht, d. h.
man kann die Mikroben je nach Belieben das eine Mal ein Enzym herstellen lassen,
dessen Charakter sich dem Pepsin nähert, und ein anderes Mal ein Ferment, das Trypsincharakter
hat. Beispiel i 1,5 kg Weizenkleie werden mit i, 5 kg Sägemehl gemischt und das
Ganze mit 4,5 1 Wasser angefeuchtet, dem vorher 3o ccm ioprozentige Ammoniaklösung
zugesetzt sind. Nunmehr wird mit einer Aufschwemmung von Aspergillus orizae geimpft.
Nach 3 Tagen bereits kann der Brei zur Trockne verdampft oder mit Wasser ausgezogen
werden, das dann destilliert oder dialysiert wird. Destilliert man, so werden die
