Abstract
Description
Die Erfindung betrifft ein Verfahren der im Oberbegriff des Anspruchs 1 angegebenen Art.The invention relates to a method in the preamble of claim 1 specified Art.
Bisque biscuits are usually made using whole eggs produced, which are processed separately according to protein and egg yolk be tested. The protein is usually made with sugar processed into egg whites and the egg yolk is whisked or whipped and then mixed with the egg whites mixes and flour and possibly baking powder added. This procedure applies to both the manufacturers in small quantities in bakeries and pastry shops also for the more industrial production, the loc The consistency and porosity of the biscuits on the introduced by the air trapped in the egg snow becomes. Also in the industrial manufacture by means of manufactured mixtures or when using substitutes substances, such as in particular cholesterol-free egg products sen, this principle is basically maintained.
Another option is to add eggs and sugar to hit together over a heat source, causing a Expansion of the air bubbles hit by heat River is reached, so that a particularly loose pastry is achievable.
Biscuit biscuits were previously preferred for cake bases or produced in the form of the well-known "ladyfingers". After part of the well-known biscuit pastry is the fact that the looseness when stored - even in packaged Shape - usually wears off very soon. The pastry dries out and becomes unsavory. Besides, the consistency is too very pliable when fresh and at the same time inelastic. The pastry collapses even with slight pressure and is no longer able to recover the lost volume to regenerate through a shape return ability. With that industrially produced biscuit cake bases are usually not so popular that housewives own products would be preferred. Spoon biscuits packed are usually already so when consumed dried out that they keep their shape, but at the same time are completely adamant.
The invention is based, with a Ver drive the type mentioned at the beginning manage to produce pastries, which with a large amount some fine pores an elastic, in its original form has a returning consistency.
This task is carried out with the characteristic features of the Claim 1 solved.
The invention includes the finding that with a take place on the egg yolk beaten under warming the structural change the basis for a baking mass which will create the making of a biscuit batter with previously unknown properties.
Particularly advantageous in the invention is in particular that the Ver based on the measures of the invention drive, the production of biscuits enables the ins special for the conditions of manufacture and one Sales on an industrial scale is suitable, the own taste and consistency with high quality products from special pastry shops.
It is also particularly favorable that the baking mass with automated manufacturing methods even in a continuous lier run can be generated, then hitting of the egg yolk with warming while foaming with others Heat sources can be achieved, such as by Zu lead compressed air through side nozzles of a duct under microwave radiation. A subsequent cold can then beat while going through a cooling route through those provided within the cooled channel Agitators are made.
It is preferably opened in a water bath at a temperature temperature of essentially 60 ° C, the tempera structure of the battered mass while serving from the ambient temperature (or from the storage temperature) starting from the temperature of the water bath here.
The beaten egg yolk mass is then cooled and whipped until they have a mayonnaise-like consi have tendency, the cold beating essentially at room temperature, but preferably using cooling done in the same container.
The protein mass is separated with the addition of sugar from the egg yolk mass - turned to snow or on foamed.
The cold-beaten egg yolk mass and the whipped one Protein mass are mixed together, in which case with further stirring wheat and potato flour in added to an extent that a baked mass results. Optionally, the mass can contain at least one flavoring and / or baking powder are added, the amounts in Depending on the desired flavor and Target consistency of the finished pastries can be varied.
The mixing ratio of protein mass and egg yolk mass is essentially chosen four to one, with Lich is that the treatment of a relatively minor amount of egg yolk for a favorable influence in the sense the invention leads to a relatively large amount of baking mass. The quantitative ratio of wheat and potato flour is preferably three to two, which advantageously it is ensured that the finished biscuits a have sufficient elasticity and after baking don't collapse in a short time.
The invention can be advantageously applied to Pieces of biscuit, which from the mass of dough to bun-like Ge baked pieces are molded. If the molded Ge Pieces of bakery sprinkled with sesame seeds before baking and after baking with a filling with chocolate cream and / or jam are provided, the molded Pieces of pastry in the horizontal direction before filling can be cut, a design in the form of reach famous Hamburgers. These can be found at ent speaking packaging according to the known bars Distribute confectionery or miniature tarts as permanent baked goods ben. Opposite, chocolate filled with biscuit-like dough Load latches have the advantageous according to this further Education of the method according to the invention Ge produced Bakery parts have the advantage of an original appearance. also the consumption is possible without the fingers with chocolate de come into contact. For example, this is also a Advantage over the known chocolate-coated ones Butter Cookies. There is also a wide range of variations from Fillings possible in their colors - although as sweet Liquids trained - various hamburger editions can satirize. For this come in particular conditions elements corresponding to all known chocolate and Chocolates / crunchy mixes or bar fillings in Consideration.
According to the preferred embodiment of the invention it is made from protein, egg yolk, wheat and potato flour, Baking powder and possibly flavorings in the previous one Mixed dough in terms of quantity ratios mass in an automated manufacturing process continuous run of a multiple machining baking line with stations Pastries processed.
The dough is placed in a small container Taken quantities, from bun-like pastries shaped and in baking located on a conveyor belt troughs filed. The dough portions to be baked are then on top with a decor, in front preferably sesame seeds, and then spray subjected to water mist to make biscuits with a to get a smooth and shiny surface. The Baking takes place at a temperature in the range of 200 ° C up to 220 ° C in a baking station, the residence time of the Pastries in the baking device from the desired one Degree of browning, preferably a light yellow exterior depending on the color of a bisque dough. The such baked pastries are in tops and Parts separated. The continuation of the top and Bottoms are made on separate conveyor belts, whereby the lower parts with a selectable filling, for example Support elements made of chocolate or pralines / crispy Mixtures can be provided. After merging the Pastry pieces, with the sesame decorations Tops are placed on the filled bottoms, the biscuits reach a packaging station.
To separate the biscuits into upper and lower parts to avoid, is according to an inexpensive training possible of the invention, the baking line alternately to Baking of bottom parts and top parts to use and the finished biscuit parts on separate conveyor belts to continue, after filling the sub share the assembly.
The automated manufacture of composite Pastries of the type mentioned above are the least technological effort possible if for the produc tion of the upper and lower parts each a separate Baking line with its own baking station is provided. The upper and lower parts moved on conveyor belts are together in a suitable manner after the filling process menu-driven, with the tops on the filled bottom share, for example by using an attachment be positioned.
The manufactured and according to the inventive method composed of an upper part and a lower part Pastries can preferably be sealed in transparent or metallized foil material ver pack. Simplified handling for consumption results himself, if in particular one by a tear thread or formed by welding adjacent film edges A predetermined breaking line is provided which is related to the Pastry part runs essentially meridian. In order to the pastry part is opened after the packaging the fingers directly in the lid and bottom area accessible and easy to eat in this way.
The preferably foldable together from two sub-elements Mixed packaging exists after a favorable Development of the invention from an edible Material, for example from a wafer waffle batter, see above that the generation of packaging waste is significantly reduced can be.
For the user, the flavor aspect remains Advantage instead of a relatively compact bar candy to eat a pastry at the pastry component is also made clearer to the outside world. Due to the shape and aging resistance of the pastry this is easy for the need of a "snack" can be carried along and is appetizing at all times when consumed. Even at relatively high outside temperatures are arranged on the inside chocolate or ice cream filling hardly affected by their melting.
In the schematically illustrated in FIGS. 1 to 3 embodiment, the steps of a method for the manufacture position of biskuitartigem pastry is placed in a first stirring station 1 from a reservoir yolk mass 2 un ter addition of befindli chen in a further reservoir sugar 6.1 in a container 3 and pitched under warming. A water bath 3.1 , which is heated by an external heat source 5, is used for heating. The temperature, which is essentially 60 ° C., is monitored by a thermometer 8 . The opening itself is carried out by a mixer 7 ( Fig. 1).
The egg yolks beaten in the stirring station 1 and mixed with sugar are then cooled as a starting product to room temperature or to a lower temperature above the freezing point and beat cold until the mass 4 has a mayonnaise-like consistency. The temperature is monitored by a temperature sensor.
It is advantageous in terms of process technology also possible that the cooling also on a transport away (cooled pipeline) or within a separate Transport or storage container can take place.
In a second stirring station 11 (at the same time or at an earlier point in time) by means of a stirring device 12, egg whites 13 separated from the yolks 2 from a storage container are added to snow 10 . The ratio of protein 13 and egg yolk 2 is preferably essentially four to one ( Fig. 2).
The whipped egg white mass 10 is processed together with the cold whipped egg yolk mass 4 in a further stirring station 16 . Wheat and potato flour 14 , 15 are added to the mixture of protein mass 10 and egg yolk mass 4 , a stirrer 17 ensuring the appropriate mixing of the individual components. For a sufficient elasticity of the biscuits, a mass ratio of wheat to potato flour of three to two is particularly favorable. In addition, at least one flavoring agent and / or baking powder are preferably added to the mass at this point, the latter possibly also being omitted. With the flavorings, the final taste direction can be determined within wide limits ( Fig. 3).
According to the schematic representation in Fig. 4, the resulting dough 21 is pressed portioned out of a corre sponding container and thereby formed into bun-like Ge bakeware 36 , which are stored in, moved by a conveyor belt in the direction of the arrow, baking troughs 24 . One or more hinge flaps 21.1 ensure a Dres sieren of the pastries 36 and a smooth wiping of the floors. Then the pastry parts 36 are past the sier opening of a container with sesame seeds 22 and sprinkled with a correspondingly predetermined amount of grains. Before baking, the shaped and decorated biscuits 36 are subjected to a fine spray, which is generated in a fog generator 23 from water. The spray mist gives the pastry a shiny surface and gives the sesame seeds an improved liability. Pretreated in this way, the biscuits 36 pass through a baking station 30 , where they remain at an average baking temperature of 200 to 220 ° C. until they have a bright yellow outer surface corresponding to the color of a biscuit batter.
After leaving the baking station 30 , the finished baked goods 36 are separated by cutting in the equatorial direction by means of a knife (or a saw) 26 in upper parts 28 and in the respective baking tray 24 remaining parts 29 . To support the separation process, a lifting blade 27 is provided which engages in the kerf created by the knife 26 and places the upper part 28 of the pastry on a separate (not marked) conveyor belt. The separately continued pastry lower parts 29 then receive a filling 25.1 of chocolate cream and / or jam from a dosing station 25 . Alternatively or additionally, ice cream of any kind can be used individually or in combination as a filling.
The upper and lower parts 28 , 29 moved on different conveyor belts are then brought together, where the upper parts 28 are placed on the filled lower parts 29 by means of a placement sheet 31 - decorated in the manner of "hamburgers". In a subsequent packaging station 32 , the finished biscuits are packed individually or in groups in transparent or metallized film material while being sealed.
In Fig. 5 a favorable development of the invention is a modification of the process shown schematically accordingly. The upper and lower parts 28 and 29 of "hamburger" -like biscuits are prepared batchwise in a certain number of one on a baking line 40 and baked off in the same baking station 30th This advantageously eliminates the separation of the biscuits into upper and lower parts shown in FIG. 4. The filling of the lower parts as well as the joining and packaging takes place in the manner described above.
When producing larger quantities of baked goods, it is advantageous to produce the upper parts 28 and the lower parts 29 in a system 50 having two separate baking lines, as is shown schematically in FIG. 6. The baking of the upper parts 28 is carried out in the manner described in FIG. 4 by the baking mass 21 being brought out of a container in a predetermined amount via a hinge flap 21.1 , decorated with sesame seeds 22 , wetted by a mist generator 23 with water mist and in Backsta tion 30 be baked at a temperature of 200 ° C to 220 ° C. The baking mass 21 'for the lower parts 29 is also portioned by means of a hinge flap 21.1 ', filled into baking troughs 24 and immediately passed on to the baking station 30 '. After baking, the Untertei le 29 can be cooled in a cooling stage to a lower temperature, preferably room temperature, so that the filling mass 25.1 placed on the lower parts 29 after passing through the filling station 25 maintains its required consistency. In order to be able to assemble the baked components 28 , 29 into the finished biscuits, a lifting sheet 34 is provided on the conveyor belt for the upper parts 28 and a trip threshold 35 is provided on the conveyor belt for the lower parts 29 . By the stumbling sill 35, the lower parts 29 are ejected in a simple way from the baking trays, the Abhebblatt 34 positions the upper portions 28 to the provided with a filling 25.1 Bottoms 29, which then "hamburger" -like can be packaged.
In a packaging station 32 shown in more detail in FIG. 7, the biscuits 42 consisting of an upper part 28 and a lower part 29 carrying a filling 25.1 are packaged individually or in groups. The packaging is done by sealing in transparent or metallized foil material. In this case, a lower half 32.1 and an upper half 32.2 of the packaging are brought from feed stations 39 , 41 and connected to one another in the station 43 by sealing. The packaging is in particular provided with a predetermined breaking line, preferably formed by a tear thread or by welding adjacent film edges. In the individual packaging 37 shown separately in FIG. 7a, a predetermined breaking line 38 extends essentially meridian-like with respect to the biscuit 42 .
This way the biscuit can be torn open can be removed from the packaging without the fin ger the person who takes the biscuit or consumes it Person come into contact with the filling. The pastry piece can be directly between the thumb and finger (s) hold and be brought to the mouth.
The invention is not restricted in its implementation to the preferred embodiment given above game. Rather, a number of variants are conceivable which of the solution shown also in principle makes use of different types.
