Bekanntlich erfolgt die elektroosmotische Reinigung von Zuckersäften in der Weise, daß der Saft der Einwirkung des elektrischen Gleichstromes zwischen Diaphragmen unterworfen wird, von denen das der Anode vorgeschaltete eine Diaphragma positiver Ladungsfähigkeit ist, also negative Ionen hindurchwandern läßt, während der Kathode ein Diaphragma mit negativer Ladungsfähigkeit vorgeschaltet ist, das positive Ionen hindurchwandern läßt. Bei der praktischen Durchführung dieser Verfahren tritt, je nach der Wahl der Diaphragmen, jedoch eine Reihe von Schwierigkeiten auf. Einerseits entsteht durch kathodische bzw. anodische Wassenvanderung des öfteren eine unerwünschte Verdünnung der Mittelraumflüssigkeit. Anderseits treten, je nach der Porengröße und der elektrischen Aufladung der benutzten Diaphragmen, Verluste an wertvollen Substanzen durch Abwanderung aus dem Mittelraum nach den Seitenräumen auf. Bei der eiektroosmotischen Reinigung von Zuckersäften tritt ferner die praktische Schwierigkeit hinzu, daß nur dann die Bildung von Invertzucker vermieten wird, wenn die den Zuckersaft enthaltende Mittelraumflüssigkeit neutral bzw. schwach alkalisch reagiert.
