Abstract
Description
Die Erfindung betrifft ein Verfahren zur VerhinderungThe invention relates to a method of prevention
des Gelierens von Flüssigkaffee.the gelation of liquid coffee.
Liquid coffee extracts are made by countercurrent aqueous extractions Obtained from roasted coffee, with the aqueous phase at temperatures between approx 100 ^ - 1850 C. The higher temperatures lead to a significantly increased dissociation of the acid contained in coffee and a lowering of the pH value, so that in the end an acid hydrolysis is carried out with the coffee's own acids will. As a result of this acid hydrolysis, the more difficultly soluble components are now also removed of roasted coffee such as pentosans and hemicelluloses into water-soluble components disassembled. The higher the temperature during the production of the coffee extract, the more so Hemicelluloses, So swelling substances are brought into solution.
If the liquid coffee extract is not dried, as is usually the case, is preferably spray-dried, but continues to be consumed in its liquid state is to be, then it must be bottled immediately after production and to about minus 200: C to protect it from microbial spoilage. Extract coffee usually contains about 20J-30; Dry matter and during freezing becomes these between the egg crystals are sometimes further concentrated to 60-80%. Through this increase in the liquid, not yet crystallized phase, the salt and Acid concentrations and there is a crosslinking of the originally water-soluble Source of the coffee instead. This causes the liquid coffee extract after is partially in the gelled state after thawing at room temperature and thus is thick and stringy.
As especially for machines in large kitchens and restaurants or for Self-service machines there is an increasing demand for liquid coffee attempts are already being made in various ways to remedy this disadvantage. On the one hand has you tried by lowering the degree of roasting or changing the extraction temperature, on the other hand, has to hold back the hydrolysis of the liquid coffee from the outset the liquid coffee is subjected to hot filling or tried by chemical Treatment, namely by adding of certain enzymes that the dissolved hemicelluloses are supposed to break down further to prevent gelling. Another measure consisted in giving the packaged liquid coffee a treatment subjected to ultrasound at 20 °; this procedure destroys the gel, but that regresses after a relatively short time.
Despite all attempts, it had not yet been possible to make liquid coffee to preserve over a longer period of time and to prevent gel formation without at the same time Change aroma and taste considerably.
The invention is therefore based on the object of a new method to prevent liquid coffee from gelling.
To solve the problem, a method is proposed that thereby is characterized in that the cooled liquid coffee is treated with ionizing rays will.
Sterilization with ionizing rays has increased in recent years gained great importance in the pharmaceutical, but also in the food sector. The sterilizing effect of the ionizing radiation comes from structural changes in the nucleic acids or enzymes. Inactivate all ionizing rays not only cellular microorganisms, but also viruses and all complex structures organic molecules.
Ionizing rays are therefore safe Sterilization, the so-called deep sterilization of pharmaceutical products and food used. When treating pharmaceuticals or foods with ionizing Radiation does not produce any fission products, so this type of sterilization in some Countries generally or at least officially approved for some of the foods is.
But because of ionizing rays hydrogen bonds, sulfur bridges etc. can be blown open, especially in the case of more complex organic compounds and often affect the aroma and taste of a food, this is this Process, however, has the disadvantage that the foods treated in this way - for pharmaceuticals this aspect is less important - changing the taste can.
Surprisingly, it has now been found that the gel formation can prevent in liquid coffee by treatment with ionizing radiation without that the coffee treated in this way suffers any loss of quality. The liquid coffee is produced, packaged and refrigerated in the usual way, preferably on around minus 200-C, in order to avoid the natural coffee aromas containing mercapto groups largely to spare. The irradiation then takes place in a manner that is known per se Way, with preferably gamma radiation or corpus color radiation from electron accelerators is used. The radiation dose must be in the range of approximately Move 600 - about 1000 krad to prevent gel formation later on and on the other hand not to cause any loss of quality. After the radiation treatment the coffee does not stay frozen, but can be stored at room temperature will. In addition to preventing gel formation, there is of course also one Sterilization, as any microbes that may be present are killed.
It is known, for example, that in liquid coffee it changes very quickly Slime-forming microbes settle in the same way as, for example, in milk at relatively low temperatures during the thawing process a slime build-up of the liquid coffee concentrate and thus in addition to the gel formation the change in viscosity caused by the hemicelluloses is also accompanied by such a change bring about. Therefore, the additional effect of sterilization is beneficial.
The invention is explained in more detail below with the aid of the examples: Example A batch of liquid coffee extract was made in the customary, Filled in plastic packaging and an irradiation treatment with gamma rays subjected at 800 krad. From this batch, individual samples were taken before treatment, examined immediately after treatment and every month. The results are in the following Table put together. When tasting even after almost one year of storage at room temperature there was no difference detect freshly made coffee extract.
The examination of the liquid coffee showed that the residual radiation of the corresponds to the starting materials and corresponds to only a few picorads. This amount of radiation moves in the area of what the product is based on its natural content regularly emits carbon 14 and potassium 40.
