Durch Verschieben der als Flügelrad ausgebildeten unteren Platte b zwischen den Marken O und 6" kann man beliebig die Durchbrechungen der Oberplatte unterdecken und öffnen, um die Gasflammen zu drosseln und zu leiten bzw. durchzulassen. Das hat den Zweck, bei leicht anbrennbaren Speisen die Flammen am unmittelbaren Zutritt zum Kochgefäß zu hindern; das wird dadurch erleichtert, daß die Flügel des Flügelrades abgebogen sind.
