Description
Verfahren zur Entbitterung von Lupinen und* anderen Hülsenfrüchten mittels alkoholischer Lösungsmittel. Bisher benutzte man zur Entbitterung von Lupinen und -anderen Hülsenfrüchten fast ausschließlich Äthylalkohol, und zwar entweder in konzentriertem oder häufiger mehr oder weniger verdünntem Zustande, aber stets unter gleichzeitiger -Anwendung von Wärme. Es wurde nun gefunden, daß man den Äthylalkohol durch den sehr viel billigeren Methylalkohol (Holzgeist) ersetzen kann, und zwar kann man in diesem Falle die Extraktion in der Kälte vornehmen. Es zeigte sich, daß bei einer einmaligen Extraktion die Hauptmenge des.Bitterstoffes herausgeht und daß bei mehrmaliger, zwei- bis dreimaliger Extraktion, -das Produkt vollkommen entbittert ist.Process for debittering lupins and * other pulses by means of alcoholic solvents. Wiederholtman diese .Arbeitsweise, so wird das Erzeugnis durchaus wohlschmeckend und genießbar. Es gelingt mit Hilfe dieses Verfahrens auch, besonders dann, wenn man das schon früher angegebene Aufschließungsverfahren, d. h. die Dampf- oder Wasserbehandlung vor der Ex= traktion. m=t ihm verbindet, die Lupinen' nach der Schalung als ganze Körner zu :entbittern.
