Description
Das nach dem erfindungsgemäßen Verfahren hergestellte Extrudat kann nach dem Zerkleinern, welches im übrigen beispielsweise entweder durch Mahlen oder aber durch Schroten erfolgen kann, sowohl als Zusatz, als auch als ausschließlicher Bestandteil zur Teigbereitung für Brot- oder Dauerbackwaren unterschiedlicher Art verwendet werden. Vor der erfindungsgemäßen Behandlung wird das Getreide, hauptsächlich Brotgetreide, nach einer sorgfältigen Trocken- und/oder Naßreinigung wie bei der Braumalzherstellung gcweicht, woraufhin sich ein mindestens 4 Tage währender Keimvorgang anschließt. Besonders bevorzugt ist es, die Keimung, abhängig von der gewünschten 1 nhaltsstoffzusammensetzung, nach sechs Tagen zu unterbrechen. Hierzu wird das gekeimte Getreide mit den Keimen, anders als bei der Braumalzherstellung, im Warmluftstrom nur soweit getrocknet, bis es mit den Keimen geschrotet werden kann. Der Wassergehalt der auf diese Weise bei Temperaturen von nicht mehr als 60"C vorgetrockneten Getreidekörner kann vorzugsweise 18 bis 22 Gew.-% betragen. Das Schrot wird dann bei den erfindungsgemäß vorgesehenen hohen Temperaturen und bei hohem Druck extrudiert. So ist beispielsweise der Lysingehalt der Getreidekörner nach sechstägiger Keimung bei praktisch konstanter Gesamtproteinmenge im Korn um etwa 15% erhöht. Besonders hervorzuheben ist, daß die Verdaulichkeit aller Vollkornproduktinhaltsstoffe durch das erfindungsgemäße Verfahren entscheidend verbessert wird, weil das Getreideprotein durch den Extrusionsvorgang praktisch vollständig verdaulich wird. Infolge des verwendeten Preßdruckes steigt dabei die Temperatur in der Presse an, ohne daß eine Erhitzung auf Temperaturen von mehr als 85" C erfolgen würde, wie sie erforderlich ist, um eine vollständige Enzymaktivierung zu erzielen: Würde nämlich bei dem bekannten Verfahren eine derart hohe Extrusionstemperatur erreicht, so läge stets eine vollständige Enzyminaktivierung vor.
