Bei der bisher üblichen Art der Herstellung von Diastaseextrakten aus Malz war man nicht in der Lage, die gesamte Diastase des Malzes oder auch nur die Hauptmenge derselben zu gewinnen, weil man sich in der Annahme, daß die Diastase sehr leicht löslich sei, mit der Bereitung eines einzigen Auszuges begnügte. Die Minderausbeute an Diastase, die sich bei der Herstellung der Diastasepräparate ergab, führte man auf Arbeitsverluste zurück; es wurde. deshalb auch jede Verzögerung der Extraktion, von der man eine Säuerung des Auszuges und als Folgeerscheinung weitere Diastaseverluste befürchten müßte, vermieden.The usual way of producing diastase extracts from malt was not used able to control the entire diastase of the malt or just the bulk of it win because one assumes that the diastase is very easily soluble with content to prepare a single extract. Um nun aber während der verhältnismäßig langen Zeit, die für die wiederholte Extraktion und das Abläutern der vermehrten Flüssigkeitsmengen erforderlich ist, die für die Diastase abträgliche Milchsäurebildung zu verhindern, wird durch Zusatz von kohlensaurem Kalk ο. dgl. dafür gesorgt, daß die entstehende Milchsäure neutralisiert wird, oder doch die Azidität der Maische stets nur: eine sehr geringe bleibt. Auf diese Weise gelingt es, die Diastase bis auf jenen Rest zu erschöpfen, der zurückbleiben muß, um die Stärke des Malzes zu verzuckern.It has now been shown that the missing amount of diastase simply remains in the mash and is lost when the residue is saccharified.
