Die mikrobielle Belastung des Korns wird vermindert und die Pasteurisierung der Oberfläche des Produkts erfolgt ohne nennenswerte Verluste bei den Inhaltsstoffen des Produkts infolge der Behandlung mit Infrarotstrahlen. Da die Trockenmasse bei Gewürzen außerordentlich hoch ist, liegt im Inneren der Körner keine starke mikrobielle Kontamination vor. Die mikrobielle Belastung ist höher an der Oberfläche der Körner. Demnach können mikrobiell sichere Gewürzkörner durch Pasteurisierung der Oberfläche gewonnen werden. Es wird möglich, pasteurisierte Gewürze ohne Hinterlassen von Rückständen auf den Produkten und unter Erhaltung ihrer organoleptischen Eigenschaften bequemer und sparsamer – verglichen mit herkömmlichen Pasteurisierungsprozessen – zu gewinnen: durch Pasteurisieren der Gewürze in der IR- bzw. UV-Einheit. Nach dem Entfernen von Staub und Verunreinigungen werden die zu pasteurisierenden Gewürzkörner zunächst der IR-Einheit, dann der UV-Einheit zugeführt.
