Bekanntlich geht das Bestreben der Brauindustrie vielfach dahin, dem Bier, insbesondere dem dunklen, einen vollmundigen, aromatisch süßen Geschmack zu verleihen. Dies wird erzielt durch entsprechende Behandlung des Malzes auf der Darre, wie es z. B. in Bayern der Fall ist, oder durch Zusatz von Karamelmalz, Farbmalz o. dgl. Das Karamelmalz -wird in der Regel in der Weise hergestellt, daß man Grünmalz oder Darrmalz in ganzen Körnern, letzteres nach dem Einweichen in Wasser, bei geeigneter Temperatur möglichst verzuckert und danach langsam karamelisiert oder brennt. Bei diesem Verfahren ist aber eine durchgreifende Verzuckerung des gesamten Inhalts der Malzkörner nicht möglich. Eine bessere Verzuckerung der Malzkörner könnte nur dadurch erreicht werden, daß man das Malz kocht und dadurch die Stärkezellen zum Teil sprengt, so daß sie der Wirkung der Diastase besser zugänglich werden; dies ist aber nicht möglich, weil durch das Kochen die Diastase des Malzes zerstört würde. Es bleibt daher bei diesem Verfahren der Karamelmalzbereitung ein großer Teil der Stärke unverzuckert. Diese Stärke wird beim darauffolgenden Karamelisieren bzw. Brennen des Kornes nicht verzuckert. Dadurch wird einerseits der Geschmack des Bieres, anderer seits aber auch die Färbekraft des Produktes nachteilig beeinflußt, da gebrannter Malzzucker ein größeres Färbevermögen besitzt als gebrannte Stärke.As is well known, the endeavors of the brewing industry are often directed towards beer, in particular to give the dark, a full-bodied, aromatic sweet taste.
