Description
Die vorliegende Erfindung betrifft verbesserte zucker freie Produkte, deren Herstellung und Verwen dung, insbesondere dragierte Produkte, deren Her stellung und Verwendung. The present invention relates to improved sugars free products, their production and use tion, in particular coated products whose Her position and use.
So be schreibt US 4 792 453 einen zuckerfreien beschich teten Kaugummi, dessen Decke hydrierte Isomaltulose enthält. Caramelized products contain sugar, sugar alcohols, types of chocolate and / or other gla suren made blanket and a liquid, white or solid core. As nuclei become Bei play chewing gum deposits, fruits, compressed or also used pharmaceutical products. So be US 4 792 453 describes a sugar-free coating chewing gum, whose cover hydrogenated isomaltulose contains. This chewing gum is made by coating with a syrup, hydrogenated isomaltulose contains. In the Dragiersirup is thus 1-O-α-D-glucopyranosyl-D-mannitol (1,1-GPM) and 6-O-α-D-Glu copyranosyl-D-sorbitol (1,6-GPS) dissolved in about equi molar quantities.
A set of methods for making sugar-coated Products are also known. Essentially becomes between the Softdragierung, the Hartdragie tion and suspension draging. Under soft-draping, the application of in Water dissolved saccharides are in motion Lichen cores understood, whereby after each order sprinkled with saccharide powder to moisturize to bind activity. By this kind of the coating a soft Drag'e blanket is produced (EP 0 625 311 A1). As disadvantage proves next to the complicated procedural carrying the fact that the dosage of the used for the coating Syrups, the dissolved saccharide, and the do tion of the powder are matched got to.
Hard coagulation is just like soft coating the application of dissolved in water Saccharides on moving cores ver but no saccharide powder was added will carry, but directly the non-aqueous Components are to be dried. As with the Softdraging becomes a variety of different Single orders (50 to 120) carried out between which is dried with hot or cold air, so that made different thicknesses Drag'e blankets can be. Harddraging is also known method with two different Saccharidlö solutions applied one after the other ( "Two-component coating"). So have been in recent times Described method in which first maltitol containing layers have been applied and closing the rest Drag'eaufbau with xylitol followed (US 5,376,389). Use these procedures However, two different saccharides to Her position of the solutions to be applied and are accordingly complicated to perform. moreover Drag coating layers of xylitol are dissolved by the dragier especially on corners and edges of be layered cores easily.
Both in Hartdragier as well as in Weichdragierver driving turns, for example, in the Verwen hydrogenated isomaltulose for coating Problem of sticking when applying the aq solutions. This sticking tendency causes an injury gluing of the garnish or a Adhering to the Dragierkesselwand.
A third possibility for the coating exists in the use of a suspension. The so far main only for sugary products applied suspended mixture consists of a liquid phase (which, for example, sugar, rice starch and glucose dissolved in water) as well a solid phase consisting of fine crystalline Consists of sugar parts. Characteristic of this Type of suspension-coating is the separate Use of different saccharides.
Those obtained by the described methods Crackers tend to be due to their composition their blanket and their core, during the La lose their crispness. The cause this is probably due to the diffusion of damp action from the core to the ceiling. This process ultimately leads to the equally undesirable Drying out the drag cores. Conversely, the well-known products in a humid atmosphere unwanted water absorption, the result sticky, soft and therefore unused for consumption attractive products are.
Also known in the art Non-coated products can be improved in terms of their shelf life, sweetening power or Solubility. These disadvantages are based on type and Composition of for the production of Pro used saccharides or their Mixtures such as hydrogenated isomaltulose. Hydrogenated isomaltulose is formed by hydrogenation of isomaltulose and contains the components 6-O-α-D-glucopyranosyl-D-sorbitol (hereinafter referred to as 1,6-GPS ge called) and 1-O-α-D-glucopyranosyl-D-mannitol (fol 1,1-GPM) in a ratio of 57% by weight: 43% by weight to 43% by weight: 57% by weight. Hy dromed isomaltulose dissolves only moderately in water and tends to dissolve in order on order gelling surfaces for bonding. EP 0 625 578 A1 describes the preparation of a sweetener which 1,1-GPS (1-O-α-D-glucopyranosyl-D) in addition to 1,6-GPS and 1,1-GPM contains sorbitol and is suitable as a sweetener for food.
The underlying of the present invention technical problem is thus the first existing disadvantages overcoming products, methods ready for their manufacture and their use put.
The solution to this technical problem lies in the Provision of gekenn in the claims gekenn recorded Products and processes for their production.
In particular, the invention provides the use of 1,6-GPS angerei mixed mixtures of 1,6-GPS and 1,1-GPM in one Ratio of 57% by weight: 43% by weight to 99% by weight: 1 wt .-% (based on the dry matter of the Preparation of used mixture of 1,6-GPS and 1.1 GPM, with its 1.6 GPS / 1.1 GPM content equal 100%) as well as 1.1-GpM-enriched mixtures 1,6-GPS and 1,1-GPM in a ratio of 1% by weight : 99 wt.% To 43 wt.%: 57 wt on the dry matter of the used for the production set mixture of 1,6-GPS and 1,1-GPM, where whose 1.6 GPS / 1.1 GPM content equals 100%) in coated products, chewing gum, chocolate, hard caramels and Compressed. The mixtures can vary depending on the composition the Ausgangsub used for their preparation even small amounts of sorbitol, mannitol etc. contain. The mixtures can be in particularly advantageously in solution or as Suspension for the coating of sweetmeat products used tel- or drug area become. The mixtures can according to the invention additive substance, essential ingredient or in essence sole component of various Pro products in the food or pharmaceutical sector his. The 1.6 GPS and 1.1 GPM on Enriched mixtures are particularly suitable partly from a single basic substance, namely produce hydrogenated isomaltulose. Out of this com Merziell available ground substance can be So according to the invention two mixtures each with un produce different properties. The 1.6-GPS enriched mixture is opposite hydrogenated isomaltulose and 1,1-GPM mixture by increased solubility and greater sweetness. The greater sweetness is based on the one hand that 1.6-GPS faster in solution goes and thus triggers a rapid sweet sensation and on the other hand, on the objectively larger, the Compound 1,6-GPS own sweetness. The 1,1-GPM enriched mixture has lower solubility as hydrogenated isomaltulose. The targeted Ver use of these two mixtures in products at Le food, sweetener or pharmaceutical sector allows the products an improved grip availability and greater sweetness as well as de simplify the production process.
The invention relates in particular to sugar-coated Pro ducks, comprising a core and a ceiling, wherein the ceiling at least a layer of one 1.6-GPS-enriched mixture of 1.6-GPS and 1.1-GPM in a ratio of 57% by weight: 43% by weight to 99% Wt .-%: 1 wt .-% (based on the dry substance of the mixture used for the preparation of 1.6 GPS and 1.1 GPM, its 1.6 GPS / 1.1 GPM content equal to 100%) and from a 1,1-GPM enriched mixture of 1,6-GPS and 1,1-GPM in one Ratio of 1% by weight: 99% by weight to 43% by weight: 57 wt .-% (based on the dry matter of the Preparation of used mixture of 1,6-GPS and 1,1-GPM, whose 1,6-GPS / 1,1-GPM content equals 100% is) contains. These layers include either excluding, if appropriate, including resulting from the parent substance Verunreini Such as sorbitol or mannitol, those mentioned Mixtures or the mixtures containing compositions. The erfindungsge The coated products contain either one Core of known composition or a core, the one or both of the 1.6 GPS be or 1.1-GPM enriched mixtures as well as a blanket of at least one layer each from one of the mixtures mentioned, that is at least one layer of 1,1-GPM and 1,6-GPS enriched mixture.
In a particularly preferred embodiment of the Invention, the coated products each at least one, preferably 25 to 45 layers of the 1.6 GPS and 1.1 GPM enriched mixture on. The products thus coated become so through layers of different combinations enveloped. By choosing the order and on Number of coating steps with the difference mixtures can be products with desired targeted production of these properties. Erfindungsge It can be provided that the core first with, in particular 25 to 45, layers of Enveloped and admixed with 1,1-GPM enriched mixture closing on these layers more, in particular from 25 to 45, layers of the 1.1-GPS enriched th mixture are applied. Such an up The resulting coated product is characterized by the higher solubility and greater sweetness of the the outer layers forming 1,6-GPS-enriched Mixture in total by higher sweetness in the Ver equal to conventional hydrogenated isomaltulose coated products. Another advantage consists in the presence of 1,1-GPM-angerei layered sequence between core and exterior layer due to their lower solubility compared to conventional hydrogenated isomaltu loose a diffusion of moisture to the drag'e surface prevented. The products therefore show improved crispness and longer shelf life on. In addition, invades vice versa in humid conditions Atmosphere less moisture from the environment in the core, so that even under these circumstances the durability is improved. The invention um However, a version in which the core closer layers of 1,6-GPS containing mixture are built while the outer layers Containing 1.1 GPM enriched mixture.
Solubility also plays a role in the pharmaceutical sector of products or, in the case of coated products, Of their ceilings many times an important role. The solubility of the products or ceilings directly influences the drug release and thus also the place of action and the working time of the ap plicated pharmaceuticals. In cases where one faster release of the pharmaceuticals desired is, according to the invention exclusively or predominantly 1,6-GPS-enriched mixtures with their increased solubility as a ceiling or for manufacturing used by the drug carrier. Conversely, can in cases where a slower drug-free tion is desired, exclusively or in the sentlichen a 1.1-GPS-enriched mixture for Production of the ceiling or the medicine medium carrier can be used.
It is also vorgese according to the invention hen that the mixtures used or the ceiling to additional fillers, in particular polydextrose, Calcium carbonate or inulin may contain.
The present invention also includes the use of mixtures and blankets containing these mixtures, the surface-active sub such as polysorbates (ethoxylated sorbitan ester), in particular in an amount of 0.05% by weight to 0.5% by weight and / or film formers such as methylcel lulose gelatin, hydroxypropyl cellulose, Ethyl cellulose, hydroxyethyl cellulose, carboxymethyl cellulose and mixtures thereof. additionally can binders such as alginates, plant gums or plasticizer.
In a further embodiment, the Er find the use of the mixtures and the these mixtures containing covers coated with sugar products, the intensive sweeteners, especially Cycla mat, saccharin, aspartame, glycyrrhizin, dihydro chalcone, thaumatin, monellin, acesulfame, alitame or Containing sucralose.
In particular, the invention relates to a sugar-coated Product whose core is a gum pillow, a chew rubber ball, a fruit, nut, chocolate, Hartka ramelle, soft caramel, jelly, gum arabic Pro dukt, nonpareille, love pearl, snack, pharmaceut nice product or other lumpy food telprodukt is.
The core may be known or a known nature 1.6 GPS or 1.1 GPM enriched Ge mix of 1.6 GPS and 1.1 GPM included. OF INVENTION it can of course be provided that that this core also provided for the ceiling Dyes, binders, sugar substitutes, In surfactants or surfactants Contains fillers. The invention also includes a coated product with a core in the form of a Compressed product. The Comprimat can be 1.6-GPS or Containing 1.1 GPM-enriched mixture or a com represent primate of both mixtures. The selection and Amount of inventions used for this communication The mixture according to the invention influences its solubility and, where appropriate, that of Comprimat contained pharmaceuticals.
The invention also provides a method of preparing a 1,6-GPS and a 1,1-GPM enriched mixture of 1,6-GPS and 1,1-GPM containing a single source, namely hydrogenated isomaltulose characterized in that hydrogenated isomaltulose is dissolved in water, crystalline hydrogenated isomaltulose is added in an amount such that its solubility is exceeded, the resulting suspension filtered, and the 1,6-GPS-enriched filtrate from 1,1- GPM-enriched filter cake is separated. Alternatively, hydrogenated isomaltulose is mixed with water in such a ratio that the amount of water is insufficient to dissolve the entire amount of hydrogenated isomaltulose at the chosen temperature (see Figures 7 and 8).
This process is thus distinguished by the fact that only one starting material, namely hydrogenated isomaltulose, is used to prepare the two mixtures according to the invention. It contains more than 98% 1,6-GPS and 1,1-GPM, with admixtures of sorbitol or mannitol possible. In the context of the present invention, accumulations of 1,6-GPS and 1,1-GPM always refer to the amount of 1,6-GPS and 1,1-GPM used equal to 100%. According to the invention, in particular at a temperature of 20 ° to 95 °, a saturated solution is made, for example, of ISOMALT® type M. Depending on the temperature used, solid, powdery hydrogenated isomaltulose, for example ISOMALT® type PF (powder), is added to this solution in such an amount that the solubility described in FIG. 6 is exceeded by 1% to 40% , The hydrogenated isomaltulose which is added to the aqueous solution of hydrogenated isomaltulose undergoes conditions in which complete solution of the hydrogenated isomaltulose is no longer possible. It therefore forms a suspension. The total solids content of this suspension may be about 50 wt .-% to 90 wt .-%, wherein the solids are partially dissolved and partially unresolved. In the preparation of the suspension is preferably good to stir. The adjustment of an equilibrium between the composition of the liquid and the Fe most phase of the suspension depends on the total solids content and the temperature and is completed after about 10 to 60 min. After adjusting this equilibrium, there is a liquid phase containing 1,6-GPS and 1,1-GPM in a different ratio than in hydrogenated isomaltulose. The suspended solid phase also contains 1,6-GPS and 1,1-GPM in a different ratio than in hydrogenated isomaltulose. In addition, 1,1-GPM is present in the solid phase as a dihydrate, in contrast to the 1,1-GPM in the liquid phase. The composition of the liquid and the solid phase, that is the Men gen ratios of 1,6-GPS to 1,1-GPM he are inventively adjustable within wide limits by the temperature of the suspension and the relative, undissolved solids content. Figs. 1 to 5 illustrate that by adjusting the temperature and the relative, undissolved solids content of the composition of the resulting phases and thus the mixtures can be controlled ge. Of course, the total ratio (dissolved and solid) of 1,6-GPS to 1,1-GPM contained in the two phases corresponds to that of the hydrogenated isomaltulose used. A small undissolved solids content in the suspension gives a high 1,1-GPM dihydrate enrichment in the first phase, but a high undissolved solids content gives a composition similar to that of the hydrogenated isomaltulose, but with 1,1- GPM Dihy is enriched in the solid phase. In the solid phase, therefore, always enriched 1,1-GPM, wherein the ratio of 1,6-GPS to 1,1-GPM of 1 wt .-%: 99 wt .-% to 43 wt .-%: 57 wt .-% can vary. In the liquid phase, 1,6-GPS is always enriched, with the ratio of 1,6-GPS to 1,1-GPM being from about 57% by weight: 43% by weight to 99% by weight: 1% by weight .-% may vary.
According to the invention, the two phases ent kept suspensions also littered by cooling Solutions of hydrogenated isomaltulose and spon given tane or induced fine grain formation if relationship by adding seed crystals wise ISOMALT® PF or PE are produced.
After adjusting the balance by adjusting the Temperature and the relative, undissolved solids content set in the desired manner, the two phases are according to the invention voneinan the severed. The inventively provided Separation of the two phases takes place by filtration ren, centrifugation or sedimentation, but can also be done by other steps. you receives a 1.1-GPM-enriched solid and a 1.6-GPS-enriched liquid phase, respectively 1.6 GPS and 1.1 GPM behave in different quantities include. The liquid phase can by Ein vapors are converted into a solid phase.
The inventive method accordingly allows the provision of 1,6-GPS-enriched mixtures, consisting of 1.6 GPS and 1.1 GPM in a ratio from 57% by weight: 43% by weight to 99% by weight: 1 Wt .-%. The invention also provides 1,1-GPM enriched mixtures, consisting of 1,6-GPS and 1,1-GPM in a ratio of 1% by weight: 99 Wt% to 43 wt%: 57 wt%. These mixtures For example, in the form of their solution to the Dra be used. Instead of a solution can also a suspension can be used. The Verwen a suspension of hydrogenated isomaltulose and according to the invention particularly preferably a Sus pension from 1.6 GPS or 1.1 GPM enriched mixtures for coating products has the advantage of a greatly reduced adhesive inclination when dragging on. In addition, the Aufbrin tion of high dry matter contents in relative Short drying time possible, as undissolved solids along with dissolved ingredients on the dra be applied. The advantageous, ver reduced gluing tendency is due to the presence of very high levels of nuclei, consisting of 1,1-GPM dihydrate and 1,6-GPS.
The targeted use of different Zu compositions and the associated under different characteristics of the Mixtures not only allows the production verbes serter glazed products or compressed products, but Of course, the production also improved ter products in all sectors where sugar or sugar substitutes play a role. The 1.6-GPS enriched mixture can in the mentioned products also the so far used well soluble sugar substitutes like for example, replace maltitol. Hard caramels can according to the invention using the 1,1-GPM angerei prepared mixtures. Those who invent According to the invention containing mixtures, esp especially the glazed products, can by suitable choice of the composition of the used Mixtures and layer sequence so composed be that the total composition of the in the Pro dukt included 1.6-GPS and 1.1-GPM together in commercial hydrogenated isomaltulose equivalent.
In one embodiment of this invention is a Product provided that at least one of 1.6 GPS and 1.1 GPM enriched contains mixtures. These products can add gelatin, fat or fat substitutes You can of course also already fillers, binders, dyes, in intensive sweeteners, emulsifiers, surface-active Substances, sugar substitutes, other sweeteners contain medium or pharmaceutical active substances.

By choosing suitable Tempe temperatures and concentrations of hydrogenated isomaltulose loose and possibly repeated repetition of the separation process, it is also according to the invention possible, 1.1 GPM / 1.6 GPS enriched mixtures to obtain desired composition.
Die Suspension wird bei 35°C je nach Korngröße 1-20 Stunden gerührt.5 kg of hydrogenated isomaltulose are added to 5 kg of water (demineralized). The suspension is at 35 ° C depending on the grain size 1-20 Hours stirred.
Subsequently, this suspension at 35 ° C in liquid phase and solid phase in a heated Pressure filter isolated.
The clear solution is turned on a rotary evaporator evaporated and dried, if appropriate subsequently ground.
Man erhält 1,95 kg weißen Feststoff (Wassergehalt vor Trocknen 24,8%, Verhältnis 1,1-GPM : 1,6-GPS 84% : 16%) und 7,86 kg klare Lösung (42,3°Brix, Verhältnis 1,1-GPM : 1,6-GPS 33,5% : 66,5%).This gives 1.95 kg of white solid (water content before drying 24.8%, 1.1-GPM ratio: 1.6-GPS 84%: 16%) and 7.86 kg of clear solution (42.3 ° Brix, 1.1-GPM ratio: 1.6-GPS 33.5%: 66.5%).
The separation of the two phases can also by means of a suction filter, centrifuge or by sedimenta tion.
Examples 1 and 2 and Figs. 1 to 5 illustrate that mixtures of desired composition can be obtained by specific use of the reaction parameters of temperature and solids concentration.
Figs. 7 and 8 illustrate this fiction, contemporary advantage.
These figures can be seen in which Ratio hydrogenated isomaltulose with Mixed water and at what temperature this Suspension must be kept, for example a liquid phase with a specific 1,6-GPS: 1.1 GPM ratio.
If, for example, hydrogenated isomaltulose is mixed with water in the United ratio of 2: 1, it is obtained at a temperature from 45 ° C an approximately 57 ° Brix solution with a 1.6 GPS: 1.1 GPM ratio of 77%: 23%, that is, 3.3: 1.
Dasselbe Gemisch führt aber bei 55°C zu einer ca. 59°Brix-Lösung mit einem 1,6-GPS : 1,1-GPM-Verhält nis von 67% : 33%, das heißt, 2 : 1.However, the same mixture at 55 ° C leads to an approx. 59 ° Brix solution with a 1.6 GPS: 1.1 GPM ratio of 67%: 33%, that is, 2: 1.
The 1,1-GPM enriched mixture and gum arabic Cum are dissolved in water at about 85 ° C, at 70 ° C cooled and then titanium dioxide suspended therein.
This mixture is kept at 70 ° C. with stirring and in a Hartdragierverfahren on chewing gum Kis applied (about 50-80 individual orders).
The chewing gum inserts (60 kg) are in an automatic Coating machine moves and with Air (temperature 25 ° C, dew point 0 ° C) in countercurrent proceed after every application for 2-5 minutes dries.
The advantage of the sugar-free raw material used fes (1,1-GPM-enriched mixture) exists esp special is that due to the low solubility of the 1,1-GPM dihydrate formed on the cores a barrier layer is formed around the core, the the diffusion of water and other volatile Divide (flavors) from the core prevented. Thereby it does not dry out, as it does with others Drag'es is frequently observed. Also the sensory detectable crispness is retained longer.
Formulation I is prepared as described in Example 3 and sprayed on the chewing gum inserts, being half the drag cover (layers directly on the core) in 45 individual orders becomes.
Recipe II is made as recipe I, where however, the temperature of the mixture is 60 ° C. In 35 individual orders, this suspension is on the with recipe I edged up chewing gum deposits brought to the desired Drag'e final weight.
Die Versuchsparameter entsprechen denen des Bei spiels 3.The experimental parameters correspond to those of the Bei game 3.
The sparingly soluble 1,1-GPM dihydrate from Formulation I (see also Example 3) forms a barrier layer against moisture from the core. The 1.6 GPS is on richer outer layer influences the sweet sensation positive, like sensory examinations (thresholds valuation, pairwise difference check) result.
While stirring, 1,6-GPS enriched mixture (43.6 kg) and gum arabic dissolved in water and the solution heated to 75 ° C until a crystal free solution is present; this solution is set to approx. Cooled to 60 ° C, APM, acesulfame K, titanium dioxide and 1.6-GPS enriched mixture (powder) added until a homogeneous mass is present. The tempera the suspension is adjusted to 55 ° C and selected maintained during the process.
The coating takes place analogously to that under Example 3 described method. It results in a high Dry substance application per unit time. Under at This is due to the increased solubility of 1,6-GPS becomes a faster sweet sensation when consumed perceived.
The chewing gum base is placed in a warming cabinet at approx. Heated to 55 ° C before being added to the kneader, then the chewing gum base is left for 1-2 minutes kneaded. During kneading, the powdery Ingredients (1.1-GPM and 1.6-GPS-enriched Ge mixed, sweetener, menthol) gradually in the given order, then Aroma, Sor bits syrup and glycerin. Is kneaded until the mass homogeneous (final temperature approx. 45 ° C). The crowd is taken out of the kneader and in about 1-kg heavy Divided portions.
The portioned chewing gum mass is about 15-20 Mi on a talc sprinkled underlay between racked, extru with a suitable extruder diert and further processed as usual.
The substantial replacement of the easily soluble sugar alcohol sorbitol and the complete replacement of the also slightly soluble maltitol by the lower soluble sugar alcohols 1.6-GPS and 1.1-GPM leads to the so-called "flavor enhancement effect".
The product is especially for diabetics suitable.
The 1.6-GPS-enriched mixture, the fructo-oligosaccharides and water are in a pack cooker 132-136 ° C (depending on the desired consistency) cooked, the Gelatin solution, vegetable fat, emulsifier, lemons acid and 1,1-GPM enriched mixture in the given order and at high Ge speed mixed for 2-3 minutes until a ho is present in a homogeneous mass. Finally, flavor is added and the boiler is emptied. Advantageous is the homo genise using a suitable homo genisators. The cooled to 44-46 ° C Soft caramel mass is then drawn for 5-10 minutes (Temperature then 47-49 ° C).
In contrast to usual sugar-free soft caramel The above product contains only dia betikergeeignete ingredients.
The 1.1-GPM-enriched mixture and water become Cooked in a sweet cooker at 155-160 ° C, 5 minutes exposed to full vacuum, and after cooling the Earth at 110-115 ° C will become acid, aroma and sweet added substance. Then the mass becomes too Sweets shaped and chilled.
