Bisher wurde das Abläutern der Würze von den Malztrebern nach beendetem Maischprocefs entweder bei kleineren Betrieben . in dem Maischbottich selbst oder bei gröfseren Betrieben mittels eines besonderen Lä'uterbottichs vorgenommen. Die Abläuterung der Hauptwürze erfordert, je nachdem das Getreide fein oder grob geschrotet ist und je nachdem man gutes oder geringeres Malz verarbeitet, mehr oder weniger Zeit und dauert mindestens 1V2 bis 2V2 Stunden. Hierauf folgt das Auslaugen der Würze aus den Trebern und dem Teig. Zu diesem Zweck müssen die Trebern drei bis fünfmal oder auch noch öfter, sei es mit der sogen. Aufhackmaschine, sei es mit der Schaufel, aufgelockert und jedesmal von Neuem mit heifsem Wasser übergeschwänzt werden. Hierzu ist sehr viel Zeit nöthig; je nach der Qualität des Malzes und der Feinheit des Schrotes braucht man 4 bis 6 Stunden und zuweilen noch mehr, bis die Trebern so weit als möglich ausgelaugt sind. Trotz der aufmerksamsten Arbeit bleiben hierbei indefs immer noch 2 bis 3, ja vielfach noch 5 bis 6 pCt. Diese auf dem Senkboden zurückgebliebenen Treberhülsen u. s. w. werden nun durch Krücken gut ausgebreitet und darauf der obere, als Filterboden ausgebildete Senkboden c durch Drehen des Rades h auf die Trebermasse gepreist. Die noch in den Treberhülsen befindliche Würze wird hierdurch vollständig ausgeprefst und gelangt ebenfalls durch den unteren Senkboden in den unter ihn befindlichen Theil des Bottichs. Man lä'fst hierauf die Würze unter dem Senkboden b eine Zeit lang, etwa 20 bis 30 Minuten, in Ruhe, damit sich der Teig aus ihr absetzen kann, und drückt danach beide Senkböden gemeinsam langsam nach unten, was durch Drehung des Rades g in leichter Weise geschehen kann. Die Würze wird infolge dessen durch die vorhin mittels des oberen und unteren Senkbodens zusammengeprefste, zwischen den beiden Senkböden liegende Treberhülsenschicht und i durch die im oberen Senkboden liegende Filterschicht hindurchgedrückt und kommt oberhalb des Senkbodens c in filtrirtem Zustand zum Vorschein, von wo aus sie durch die in der Bottichwand befindliche-Schieberöffnung i, die allmählich, je nach dem Stande der in dem Bottich befindlichen Würze, nach unten geöffnet wird, ablaufen kann. Falls hierbei anfangs trübe Würze austritt, so fängt man sie mittels einer geeigneten Vorrichtung für sich auf und leitet sie vorteilhaft zu einer Druckpumpe k, von welcher sie in den Bottich von unten wieder hineingepumpt wird. Die Senkböden werden so weit nach unten gedrückt, bis der untere Boden an den Boden des Bottichs gelangt ist bezw. auf einem dicht, etwa 4 cm über dem Boden des Bottichs angebrachten Ring / aufruht und keine Würze mehr oben abläuft. Das so in den unteren Theil des Bottichs eingeführte Wasser drückt sich durch die ganze zwischen den Senkböden befindliche Trebermasse hindurch und laugt sowohl den unter dem unteren Senkboden befindlichen Teig, als auch die zwischen den Senkböden liegenden Trebern vollständig aus, so dafs keine Würze in den Trebern verbleibt. Versuche ergaben, dafs die ganze theoretisch überhaupt zu erzielende Würze thatsächlich erhalten werden kann. Bei den bisherigen Läuterbottichen ist es nämlich erforderlich, dieselben zum Schutz gegen das Auskühlen der Würze und des Wassers in der langen Be-. triebszeit mit einer Wärmeisolirung oder mit einer Dampfheizung und von oben mit Deckeln oder einer haubenartigen Abdachung zu versehen, was bei dem vorliegenden Verfahren fortfällt, da einerseits die Betriebszeit auf die Hälfte beschränkt und andererseits die Flüssigkeit gegen Abkühlung nach oben hin durch die Siebboden geschützt ist. Ein weiterer Vortheil dieses Verfahrens besteht darin, dafs die ganze, oft äufserst kostspielige Läuterbatterie sowie die unter Umständen sehr theure Aufhackmaschine nicht mehr nöthig ist.The advantages of the present method are evident.
