So lehrt die deutsche Patentschrift 614 709, daß man gewisse Mehle durch Zusatz von hemizellulose- und
proteinreichen Pflanzensamen, z. B. von Johannisbrotkernmehl, verbessern kann. Die Verbesserung besteht
jedoch darin, in kleberschwachen Mehlen den Klebermangel auszugleichen. Eine solche Wirkung, die bei
der Herstellung plastischer Teige, beispielsweise bei der Brotteigbereitung, nützlich ist, wäre bei der Herstellung
von Biskuitteigen höchst unerwünscht, da für sie kleberschwache Mehlsorten bzw. Mischungen aus
Mehl und Weizenstärke (»Weizenpuder«) verwendet werden müssen. Auf Grund der obengenannten
deutschen Patentschrift mußte der Fachmann also erwarten, daß sich eine Beimischung von Johannisbrotkernmehl
od. dgl. bei der Bereitung von Biskuitmassen ungünstig auswirken werde. Nirgendwo gibt
ihm die Patentschrift eine Anregung, in dem bekannten einstufigen Verfahren zur Herstellung von Biskuitteigen
die Emulgatoren durch Johannisbrotkernmehl oder bestimmte andere Dickungsmittel zu ersetzen.
Die USA.-Patentschrift 2 611 704 betrifft Fertigmehle (»dry mixes«), die aus Backfett mit Zusätzen
(»shortening mix«) und den anderen trockenen Teigbestandteilen bestehen. Das Fertigmehl enthält als
wichtigen Bestandteil Stoffe, die in der Patentschrift als Stabilisatoren (»stabilizers«) bezeichnet werden, die
der Fachmann indessen zu den Emulgatoren zählt. Es handelt sich um Ester bzw. Äther mehrwertiger Alkohole,
die zumindest noch eine freie alkoholische Hydroxylgruppe enthalten. Neben diesen sogenannten
Stabilisatoren kann das Fertigmehl sogenannte »emulsifying agents« enthalten; als solche werden unter
anderem Pektin, Gelatine, Alginat, Tragant bezeichnet, also Stoffe, die mit Wasser viskose, schleimige
oder gallertige Flüssigkeiten ergeben und die in unserer Fachsprache als Dickungsmittel zu bezeichnen wären.
Als weitere Eventualzusätze werden oberflächenaktive Stoffe vorgeschlagen, z. B. Seifen. Die Kombination
der Zusätze führt laut der obsngenannten Patentschrift unter anderem zu einer Verbesserung der Wirkung
der Backfette; infolge davon können entweder geringere Fettmengen verwendet werden oder Fette,

Aus der USA.-Patentschrift 2 996 384 sind fetthaltige Fertigkuchenmehle (»Cake Mixes«) bekannt, die
das Natriumsalz der Carboxymethylcellulose enthalten. Die Herstellung dieser Fertigkuchenmehle erfordert
