Beim Backen von Brot und anderen Backwaaren macht sich sehr häufig der Uebelstand bemerkbar, dafs die Waare auf ihrer Ober-· fläche, weil die Hitze im Ofen zu stark ist, sehr bald eine harte Kruste erhält und hier event, schon verbrennt, wenn sie im Innern noch nicht gar ist. Diesem Fehler sucht man durch Erzeugung von Wasserdampf im Ofen zu begegnen und sind deswegen die Backöfen im Grofsbetriebe mit sogenannten Wrasen- oder Schwülvorrichtungen ausgestattet. Diese Einrichtungen eignen sich aber für den Kleinbetrieb nicht und sind in den Backöfen in Kochherden z. Die neue Backplatte wird von einem niedrigen rechteckigen Kasten α gebildet, welcher zum gröfseren Theile mit einer Feuchtigkeit aufsaugenden Masse b, wie Lehm, Asbest oder dergl., gefüllt ist.
