Abstract

Ein Backofen (1) hat eine Heizquelle (7) zur Erzeugung von Umluft (8). Zur Umluftführung von der Heizquelle (7) hin zu einem Backraum (18) und zurück zur Heizquelle (7) dient ein Führungskanal (9). Dieser weist einen Zuführ-Kanalabschnitt (13, 20) zur Umluftführung der von der Heizquelle (7) bereitgestellten Umluft auf. Der Zuführ-Kanalabschnitt (13, 20) grenzt über eine Grenzwand (17, 23) an den Backraum (18) an. Ein Rückführ-Kanalabschnitt (26) des Führungskanals (9) stellt eine Fluidverbindung zwischen dem Zuführ-Kanalabschnitt (13, 20) und der Heizquelle (7) dar. Zwischen dem Zuführ-Kanalabschnitt (13, 20) und dem Rückführ-Kanalabschnitt (26) ist mindestens ein Drosselelement im Führungskanal (9) angeordnet, mit dem der Querschnitt von diesem verengt werden kann. Über eine Mehrzahl von Durchgangsöffnungen steht der Zuführ-Kanalabschnitt (13, 20) mit dem Backraum (18) in Fluidverbindung. Letzterer steht über eine Mehrzahl von Verbindungsöffnungen (33a) mit dem Rückführ-Kanalabschnitt (26) in Fluidverbindung. Die Durchgangsöffnungen und/oder die Verbindungsöffnungen sind derart gestaltet, dass der Strömungswiderstand des Führungskanals (9) durch die Durchgangsöffnungen und/oder die Verbindungsöffnungen größer ist als der Strömungswiderstand des Führungskanals (9) bei vollständig geöffnetem Drosselelement (24, 33).
