Abstract

Kinder und schwangere Frauen, die an Phenylketonurie (PKU) leiden, bedürfen einer Nahrung, deren Eiweißanteil kein Phenylalanin enthält. Da diese Aminosäure als Baustein aller Eiweißstoffe auftritt, ergibt sich die Notwendigkeit, geeignete Proteine weitgehend zu hydrolysieren, das Phenylalanin aus den Hydrolysaten zu entfernon und aus den phenylalaninfreien Proteinhydrolysaten und anderen Nahrungsbestandteilen Diätnahrungen für PKU-Patienten zusammenzustellen. Die Hydrolyse ist bisher meist mit Mineralsäuren durchgeführt worden. Dabei geht ein Teil der Aminosäuren durch Zersetzung verloren; soweit davon essentielle Aminosäuren, ζ. B. Tryptophan, betroffen sind, muß das Produkt mit diesen supplementiert werden. Als Zersetzungsprodukte entstehen Huminstoffe, die dem Hydrolysat einen auf die Dauer unangenehmen Geschmack verleihen. Das Phenylalanin wird im allgemeinen durch mehrfache Behandlung mit Aktivkohle eliminiert. Andererseits ist ein Gehalt an Di- und Tripeptiden wünschenswert, da diese leichter von der Dünndarrnmucosa adsorbiert werden als Aminosäuren. In der DD-PS 262674 wird ein Verfahren zur Herstellung phenylalaninfreier Proteinhydrolysate beschrieben, bei welchem weder Huminstoffe noch Bitterpeptide gebildet werden.
