Abstract
Die Erfindung betrifft ein Verfahren und eine Vorrichtung zur Eroeffnung und Entleerung von Eiern. Mit Hilfe eines energiereichen Strahls wird eine Soll-Risz-Linie auf der Schale der ausgerichteten und einzeln fixierten Eier geschaffen. An den Eipolen angreifende Saugnaepfe fixieren zunaechst das Ei als Ganzes. Sie entfernen sich einer Kurvenbahn folgend voneinander, wobei die Eischale an der Soll-Risz-Linie reiszt und der Einhalt der Schwerkraft folgend ausflieszen kann. Das Hauptanwondungsgoblet der Erfindung Ist die Industrielle Produktion flüssiger Eiprodukte, wie VoIIeI, Eidotter und Eiklar, als Lebensmittel. Schwerpunkt ist hierbei die hygienisch unbedenkliche Gewinnung der keimfreien bzw. keimarmen Eiinhalte.The main applicator goblet of the invention is the industrial production of liquid egg products, such as whole egg, egg yolk and egg white, as food. Bei allen bisher bekannten Verfahren des Einschlags von Eiern wird der Eiinhalt eines jeden Eies durch einen mehr oder weniger starken Kontakt mit der äußeren Oberfläche der Eischale mikrobiell kontaminiert. In der Mehrzahl durchdringen Schneiden (DD 223894; DE 1920390; US 4554866; US 4137838), Dorne (SU 770464; US 2443188) oder kanülenähnliche Rohre (DE 3727951) die Eischale. Auch Doppelmesser werden angewendet, z. B. bei einer Lösung der dänischen Firma SANOVO. Es ist bekannt, daß die Eiinhalte bei diesen herkömmlichen Eieinschlagverfahren in starkem Maße mit Salmonellen und anderen pathogenen Bakterien sowie Verderbniserregern kontaminiert werden, weil die Einschlagwerkzeuge durch die keimhaltige Eischale in den keimfreien bzw. keimarmen Eiinhalt eindringen. Außerdem werden die Eiinhalte beim Auslaufen über den keimhaltigen Eischalenrand mikrobiell kontaminiert.In all hitherto known methods of impacting eggs, the egg content of each egg is microbially contaminated by a more or less strong contact with the outer surface of the egg shell. Erfindungsgemäß wird erstmals eine berührungsfreie Bearbeitung von Eiern im Bereich ihrer Eröffnung durch die Anwendung eines energieroichen Strahls (z. B. Laser-Strahl, stark fokussierter Sti ahl einer Gasentladungslampe) realisiert. Mit dem energiereichen Strahl werden Soll-Riß-Linien in die 0,2 bis 0,4mm dickon Eischalen thermisch geschnitten. An den Eischalenhälften beispielsweise über Gummisaugnäpfe angreifende Zugkräfte führen zum Aufreißen der Eier. Die Eiinhalte fließen daraufhin der Schwerkraft folgend über die sterilisierten Eischalenränder in separate Auffangbehältnisse, die eine Einzelbeurteilung jeden Eiinhaltes und damit eine Aussonderung genußuntauglicher Eiinhalte ohne Verluste an verwertbarer Substanz ermöglichen.According to the invention, contact-free processing of eggs in the region of their opening is realized for the first time by the application of an energy-rich beam (eg laser beam, strongly focused stator of a gas discharge lamp).
