Abstract
Die Erfindung betrifft ein Verfahren zur Erhoehung der Saftausbeute bei schwer pressbarem Obst und Gemuese und der erhoehten Ueberfuehrung von Pektin in die fluessige Phase durch zusaetzliche Nutzung der osmotischen Wirkung. Die beschriebene Wirkung wird durch Zusatz von Zuckerloesung in die Maische erreicht. Im Ergebnis wird eine Erhoehung der Ausbeute an trubstabilem, sensorisch hochwertigem Saft erreicht, der besonders fuer die Produktion von Saeuglingszusatznahrung und Nektare geeignet ist.The invention relates to a method for increasing the yield of juice in hard-to-press fruits and vegetables and the increased transfer of pectin into the liquid phase by additional use of the osmotic action. Die temperierte Maische wird mit Zucker, vorzugsweise mit Zuckerlösung, der auch Ascorbinsäure zugesetzt werden kann, vermischt. Bei enzymatischem Aufschluß der Maische sollte das Enzym gleichzeitig mit der Zuckerlösung zugegeben werden. Die Zuckerlösung wird mit solcher Temperatur der Maische zugesetzt, daß für die Enzyme eine optimale Wirktemperatur, vorzugsweise 45-55°C , erreicht wird. Maische und Zuckerlösung sind intensiv zu vermischen. Mischeffekt und zeitlicher Ablauf des Prozesses sind so zu führen, daß die mechanische Zerkleinerung der Zellverbände die osmotische Wirkung der Zuckerlösung maximal ermöglicht. Dabei muß der natürliche Extraktgehalt in der flüssigen Phase der Maische durch den Zuckerzusatz entscheidend, vorzugsweise um 20-50%, erhöht werden. Durch die Erhöhung des Extraktgehaltes außerhalb der Zelle erfolgt über die natürliche Osmose ein zusätzlicher Austritt der wäßrigen Zellsubstanz. Es wurde eine Trubstoffstabilität des Saftes erreicht, die auch nach mehrmaligem Erhitzen und Lagerung über 12 Wochen nicht verloren ging. Die Färbung des Saftes war arteigen und hell.
