Abstract
Die Erfindung betrifft ein Verfahren zur oekonomisch vorteilhaften Herstellung von vielseitig einsetzbaren kochsalzarmen Wuerzmitteln durch salzsaure Hydrolyse pflanzlicher Proteinrohstoffe. Das Ziel der Erfindung besteht im wesentlichen darin, ein kochsalzarmes, nicht bitteres und lebensmitteltoxikologisch unbedenkliches Hydrolysat herzustellen, das einen harmonischen, bouillonartigen und wuerzigen Geschmack besitzt und gut reproduzierbar hergestellt werden kann. Erfindungsgemaess werden pflanzliche Proteine einer salzsauren Partialhydrolyse unterworfen. Dabei ist die Salzsaeuremenge im Hydrolyseansatz nur innerhalb sehr enger Grenzen zu variieren und ein definiertes Fluessigkeits-Feststoff-Verhaeltnis einzuhalten, waehrend auf jegliche weitere Hydrolysezusaetze verzichtet werden kann.The invention relates to a process for the economically advantageous production of versatile low-boiling rooting agents by hydrochloric acid hydrolysis of vegetable protein raw materials. Die mit Salzsäure hergestellten Hydrolysate verfügen nach der Neutralisation über hohe Kochsalzkonzentrationen, die sich sowohl bei der direkten Anwendung der Hydrolysate zur Aromatisierung von Lebensmitteln als auch bei der Verarbeitung der Hydrolysate zur Fleischaromakonzentraten nachteilig auswirken können. In der US-PS 3 391 001 wird dies durch die Reduzierung der Salzsäurekonzentration von 23 auf 9, 8% unter Beibehaltung eines Flüssigkeits-Feststoff-Verhältnisses von 1,9:1,0 erreicht. Während der Kochsalzgehalt stark abnimmt, steigt der Gehalt an niedermolekularen Peptiden an, die teilweise, sofern es sich um Glutalmylpeptide handelt, eine geschmacksverstärkende Wirkung haben sollen (Tallent, W. H., J. amer. Chem. Soc. 56 [1979], 378). Nachteilig wirkt sich hier die Ausbildung eines Bittergeschmacks bei der niedrigsten o. g. Es kann nach Bedarf eingeengt und getrocknet werden und besitzt einen harmonischen, würzigen, bouillonartigen und nicht bitteren Geschmack.
