Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung von gegarten, schnittfesten Fischprodukten aus frischen oder gefrorenen und wieder aufgetauten, zerkleinerten Fischteilen als Ausgangsprodukt fuer die Herstellung von Fischsalaten und aehnlichen Erzeugnissen. Die Erfindung bezweckt die Nutzung der Vorteile einer Fischfarschherstellung in Verbindung mit der Ausschaltung der Nachteile der herkoemmlichen Garbadverfahren zur Herstellung eines gegarten, schnittfesten Fischproduktes. Das erfindungsgemaesse Verfahren beinhaltet die Herstellung von zerkleinertem Fischfleisch (Farsch) aus aufbereitetem Fisch bzw. Fischteilen, das nach dem Vermischen mit Kochsalz (1...10%), Zucker (0,5...3%), Wasser (1...35%) und gegebenenfalls Fremdenzymen (0,001...0,05%) und Gewuerzen (0,2...0,8%) portioniert, gefroren und in gefrorenem Zustand in einem speziellen Garbad, bestehend aus einer 2- bis 5%igen Essigsaeureloesung, behandelt wird.
