Nach einer Stunde wird nochmals Brauereienzym zugesetzt und der pH-Wert halbstündlich korrigiert*. Am Ende der Verdauungszeit wird der pH-Wert auf 4,5-5,0 mit Salzsäure (2. AB-DDR) eingestellt und kurz aufgekocht. Das durch Filtration erhaltene klare Partialhydrolysat wird neutralisiert, auf einen Trokkensubstanzgehalt von 4 % unter Zusatz von 0,5 % Dinatriumhydrogenphosphat χ 12 H^O verdünnt und auf 7,5-8,0 eingestellt. Danach wird nochmals kurz aufgekocht, und nach entsprechender Klärfiltration und Keimfreimachung ist die Bouillon gebrauchsfertig.Wheat and field bean meal are mixed with dist.
