Abstract
Předmětem řešení je preparát pro simultánní hořčení a dobarvení piva obsahuje částice chmele a sladinu, přičemž obsahuje 0,03 až 0,3 % hmotn. alfa kyselin chmele, 1,7 až 2,9 % hmotn. beta kyselin chmele, 3,2 až 5,2 % hmotn. iso-alfa hořkých kyselin chmele, 0,05 až 0,5 % hmotn. humulinonů, a vykazuje barvu 1 až 40 jedn. EBC. Dále je předmětem řešení způsob výroby preparátu pro simultánní hořčení a dobarvení piva spočívá v katalytické izomeraci alfa kyselin chmele ve sladině za přítomnosti extraktu z karamelových nebo barevných sladů. Reakce probíhá za varu po dobu 40 až 90 minut. Kombinací různých odrůd chmele s rozdílným obsahem alfa kyselin chmele a množství extraktu ze sladů se vyrobí směsný chmelo-sladový preparát pro simultánní hořčení a dobarvení piva se širokou škálou hořčicí vydatnosti a barvicí schopnosti, který lze použít k úpravě hořkosti a barvy piva v jednom kroku. A ještě dále je předmětem řešení použití preparátu pro simultánní hořčení a dobarvení piva k úpravě hořkosti a barvy piva v jednom kroku.
