Dosavadní stav technikyPrior art
V současné době je zvláštní pozornost věnována mikrobiální biomase, kterou reprezentují kvasnice. Vlastnosti této suroviny jsou dány zdrojem jejich původu, rozlišujeme kvasnice pivovarské, pekařské, vinné a pivní. Vedle bílkovinné substance uvedená biomasa obsahuje vitaminy skupiny B- zejména Bl, B2 a B6. Jednotlivé druhy hydrolyzátů se liší původem suroviny, stupněm dosaženého odbourávání původní bílkoviny, reakčními podmínkami hydrolýzy (teplota, tlak, koncentrace hydrolytické složky), složením, obsahem nečistot a smyslovými vlastnostmi. Currently, special attention is paid to microbial biomass, which is represented by yeast. The properties of this raw material are given by the source of their origin, we distinguish between brewer's, baker's, wine and beer yeasts. In addition to the protein substance, said biomass contains B vitamins - in particular B1, B2 and B6. In some cases, they are used as supportive medicines. They are also an adjunct in the treatment of diabetes mellitus (diabetes), in some cases reducing the required insulin doses. In most cases, they are not used in the raw state, but most often in the form of hydrolysates. The hydrolysis of yeast biomass is carried out in acidic, alkaline, or both, combined with the catalytic action of enzymes. The individual types of hydrolysates differ in the origin of the raw material, the degree of degradation of the original protein, the reaction conditions of hydrolysis (temperature, pressure, concentration of the hydrolytic component), the composition, the content of impurities and the sensory properties. Protein hydrolysis is usually performed using hydrochloric acid. At normal temperatures, the reaction between protein and hydrogen chloride in an aqueous medium is very slow and for this reason the reaction must be carried out at higher temperatures and often at pressures. After completion of the hydrolysis, neutralization is followed mainly by sodium hydroxide or sodium to give sodium chloride. If the content of the original acid is high, the resulting hydrolyzate is considerably contaminated and it is necessary to reduce the content of the neutralizing salt to a value that meets the demanding quality requirements of the food supplement.
Cílem vynálezu je proto nalezení prostředku a způsobu jeho výroby, který umožní nahradit použití kyseliny solné prostředkem jiným, který zmíněné nevýhody odstraní, proces hydrolýzy nebude nákladný a umožní i použití odpadních materiálů.The object of the invention is therefore to find a composition and a process for its production which make it possible to replace the use of hydrochloric acid with another which eliminates the said disadvantages, the hydrolysis process will not be expensive and will also allow the use of waste materials.
Podstata vynálezuThe essence of the invention
Vytyčeného cíle je dosaženo potravním kvasničným doplňkem podle vynálezu, jehož podstata spočívá vtom, že je tvořen kvasničným hydrolyzátem obsahujícím alespoň 1,5 % hmotn. hydrolyzátu syrovátky a alespoň 10 % hmotn. kolagenního hydrolyzátů.The stated object is achieved by a yeast food supplement according to the invention, the essence of which consists in that it consists of a yeast hydrolyzate containing at least 1.5% by weight. whey hydrolyzate and at least 10 wt. collagen hydrolysates.
The essence of the process for the production of a yeast food supplement is that the whey is fermented, in which the yeast is gradually metered in at the temperature of 20 to 40 ° C in the form of an aqueous suspension, the pH of the reaction mixture being maintained at 3 to 4 and terminated. when the lactic acid content is at least 1.5% by weight, then further yeast is added in the form of an aqueous suspension and the resulting yeast biomass is hydrolyzed at a temperature of 130 to 150 ° C and a pressure of 340 to 370 kPa, decanted after hydrolysis, in which the deposited unhydrolyzed portion is removed and the upper layer containing 5 to 10 wt. The dry matter is concentrated, at least 10% by weight is added. of collagen hydrolysates and the mixture is dried.
