Abstract

Μέθοδος παραγωγής προϊόντων κρέατος από ολόκληρο μυϊκό ιστό με άμεση ενσωμάτωση ελαιολάδου και μέγιστη δυνατή υποκατάσταση ζωικού λίπους, η οποία επιτυγχάνεται με την προσθήκη του ελαιολάδου μετά την εκχύλιση των αλατοδιαλυτών πρωτεϊνών του κρέατος. Η μέθοδος αυτή περιλαμβάνει τα εξής στάδια: (α) μάλαξη κρέατος στο οποίο έχει γίνει ένεση με την κατάλληλη άλμη σε συσκευή μάλαξης, (β) ανάμειξη του ελαιολάδου, (γ) η μάλαξη συνεχίζεται μέχρι την πλήρη ενσωμάτωση του ελαιολάδου, (δ) ενθήκευση, θερμική επεξεργασία και συσκευασία των προϊόντων. Τα προϊόντα με βάση το κρέας, με ενσωματωμένο ελαιόλαδο, που παράγονται σύμφωνα με την μέθοδο αυτή, παρέχουν εξαιρετική σταθερότητα από άποψη δομής (συνεκτικότητα), και τα φυσικοχημικά χαρακτηριστικά του ελαιόλαδου που περιέχεται στα προϊόντα αυτά παραμένουν αναλλοίωτα.Method of production of meat products from whole muscle tissue with immediate incorporation of olive oil and maximum substitution of animal fat, which is achieved by the addition of olive oil after extraction of salt-soluble meat proteins. This method involves the following steps: (a) rubbing meat injected with the appropriate brine into a racking machine, (b) mixing the olive oil, (c) rubbing until complete incorporation of the olive oil, (d) storage , heat treatment and packaging of products. The meat-based products incorporating olive oil produced according to this method provide excellent structural stability (consistency), and the physicochemical characteristics of the olive oil contained in these products remain unaltered.
