Abstract
La presente invención se refiere a una composición “bloqueadora de grasa” que contiene proteína de guisante, y opcionalmente un antioxidante, para aplicación a alimentos, donde la composición es capaz de reducir la absorción total de grasa en al menos un 20 % cuando la composición se aplica a los alimentos antes de freír o cocinar los alimentos. Otro aspecto de la presente invención se refiere a un proceso para preparar la composición de proteína de guisante para que tenga un pH entre aproximadamente 4 y 6. Otro aspecto de la presente invención se refiere a métodos para reducir la absorción general de grasa recubriendo un alimento crudo con una composición que contiene proteína de guisante y opcionalmente un antioxidante, antes de freír, donde el La cantidad de aceite y/o grasa absorbida por el alimento durante la cocción se reduce sustancialmente.
