本实用新型解决问题所采用的技术方案是：它包括刨架、刨刀、弹簧，刨架一端为装刨刀的“U”字形架，另一端为手柄，在“U”字形架内边设有“T”字形滑槽，在滑槽内中间装入一块圆弧形刨刀，二侧面装入二块直刨刀，在圆弧形刨刀和直刨刀与滑槽底面之间装有弹簧，弹簧顶紧刨刀，刨刀在滑槽内上下能伸缩与大小荸荠吻合刨皮。当削皮时，将荸荠刨刀插在荸荠的圆弧顶面和二侧面，圆弧刨刀和二直刨刀靠弹簧涨力将皮刨净，从而达到本实用新型使用方便的目的。
