Abstract

众所周之，炒菜锅是菜肴烹饪的工具，是家庭生活的必具用品。现有的炒菜锅基本上都是采用传热比较均匀的半圆形结构，另加一个把手。但是，这种传统的炒菜锅在使用过程中存在两个缺陷：一是烹饪时，如炉火较大，则易窜火，即火苗顺着锅沿上窜，既造成了能量的浪费，又易烧毁把手；二是刷锅或倒菜时，极易使锅内的刷锅水或菜汤顺着锅沿外流滴至外锅体上，从而导致锅体生锈，影响炒菜锅的使用寿命。
