本发明属于包装工业领域,并且涉及一种用于生产特殊低细菌包装的方法。
发明背景
低细菌包装奶酪在实践中不成问题,因为必须包装固定的物质,其通过天然细菌菌群保护该固定物质免受有害细菌的侵害。然而,就纯素奶酪产品而言,缺乏这种保护性菌群,使它们容易受到细菌感染,特别是因为填充以液态形式进行,即在包装中硬化或在包装前模具中硬化。
迄今为止,预计在包装中硬化的液态产品通常被引入“枕头”中。这是一种管状包装,其中在侧面焊接两个膜网,然后将其切成部分并在边缘再次焊接在一起。产品在膜中固化成典型的枕形。这是不利的,原因有两个:由于其不规则的形状,包装不适合进一步加工,此外,膜容易形成折痕,这通常使膜难以移除。其他方法是填充深拉(deep-drawn)包装,其包含在填充过程中暴露的产品并且仅允许低填充温度,以及填充合成表层,尽管这仅得到棒形状。在这里,填充也只能在低温下进行。

发明内容
本发明涉及一种用于低细菌包装纯素奶酪的方法,包括以下步骤或由以下步骤组成:
(a)在加热的缓冲容器中制备纯素奶酪,该缓冲容器的温度足以使纯素奶酪保持液态;
(b)准备薄膜袋,其中在填充过程中薄膜网以形成矩形的方式彼此焊接,其中薄膜袋具有带封闭盖的填充喷嘴;
(c)通过填充喷嘴将缓冲容器中的纯素奶酪填充到薄膜袋中,直到袋子呈现矩形形状,以及
(d)用封闭盖封闭袋子,并且
(e)冷却奶酪块,任选地以对应于矩形的形状。
在生产之后,将热纯素奶酪替代品从缓冲容器分配到薄膜袋中,其中薄膜网以这样的方式彼此焊接,使得它们在填充过程中不具有不规则的形状而是形成长方体,确保了该过程在无菌条件下进行,并且同时获得允许客户进一步加工而不会出现问题的预成型产品。优选地可以通过将包装件放置在相应的模具中来促进硬化成长方体。该袋子通过具有封闭盖的填充喷嘴(“喷口”)进行填充,并且在填充后可以以不能再打开的方式封闭。这还可以保护产品免受意外污染,并确保其以原始状态包装。
用于生产薄膜袋的合适材料特别是线性低密度聚乙烯(LLDPE),其可以是多层层压材料的形式,同时也可以具有由其他塑料组成的层。一种优选产品是QuadPack的Cheertainer 15L BLUE SB Multi 30Plug IR,它形成由四层组成的层压材料,即(从内到外)蓝色LLDPE(52μm)、EVOH(6μm)、蓝色LLDPE(52μm)和OPA(15μm)。图2a-c显示了填充前、填充期间和填充后的薄膜袋。
具有封闭盖的填充喷嘴同样是可商购的。Modulpac AB销售的类型特别合适(详情见图1)。

Claims (4)
1.一种用于低细菌包装纯素奶酪的方法,包括以下步骤或由以下步骤组成:
(a)在加热的缓冲容器中制备纯素奶酪,该缓冲容器的温度足以使纯素奶酪保持液态;
(b)准备薄膜袋,其中在填充过程中薄膜网以形成矩形的方式彼此焊接,其中薄膜袋具有带封闭盖的填充喷嘴;
(c)通过填充喷嘴将缓冲容器中的纯素奶酪填充到薄膜袋中,直到袋子呈现矩形形状,以及
(d)用封闭盖封闭袋子,并且
(e)冷却奶酪块,任选地以对应于矩形的形状。
2.根据权利要求1所述的方法,其特征在于包装的矩形形状符合奶酪块的Euroblock形式。
3.根据权利要求1所述的方法,其特征在于使用完全或部分由LLDPE组成的薄膜袋。
