Description
Technical Field
The invention relates to the technical field of tobacco processing, in particular to a method for improving quality and enhancing flavor of cigar tobacco leaves by using natural mediums.
Background
The raw materials of part of cigar tobacco leaves mainly comprise sun-cured tobacco leaves, and the aroma is an important quality characteristic of the cigar tobacco leaves. Some production technologies are not pure, so that cigar tobacco leaves are thicker, the content of chloride ions in tobacco raw materials is higher, the waxy layer on the tobacco surface is thicker and unevenly distributed, and compared with the sensory quality of imported cigar tobacco leaves, certain gaps exist, and the cigar tobacco leaves are mainly characterized in the aspects of lower aroma and richness, heavier miscellaneous gas, weaker sweet feeling and the like. In order to improve the smoking quality of cigar tobacco leaves, a cigar plant in great wall of Sichuan is used for changing the physicochemical properties of the tobacco leaves through a fermentation technology, so that the fragrance and taste of the tobacco leaves are improved, and the irritation and miscellaneous gases are reduced.
In the fermentation process of cigar tobacco leaves, oxidation, microbial action and enzyme action are the process mechanisms for changing the quality of cigar cigarettes, and the introduction of fermentation medium can influence the quality of cigar cigarettes by influencing the growth and metabolism of microorganisms. However, at present, research on cigar fermentation processes at home and abroad is mainly focused on optimization of fermentation processes, researches on cigar media are rarely reported, and the types of media available for practical cigar production are scarce. Therefore, the existing fermentation medium flavoring and upgrading technology means are limited, and the brand development of Chinese cigars is difficult to support.
The mulberry, the lemon and the black and white tea are natural products, and the mulberry and the lemon contain rich amino acids, vitamins, organic acids, carotene and other nutritional ingredients; the black and white tea contains rich tea polyphenols and the like, and how to utilize the natural media to improve cigar taste is a problem to be solved urgently at present.
Disclosure of Invention
The invention aims to solve the problems and provide a method for improving quality and enhancing flavor of cigar tobacco leaves by utilizing natural mediums.
The invention realizes the above purpose through the following technical scheme:
a method for improving quality and enhancing flavor of cigar tobacco leaves by utilizing natural medium, comprising the following steps:
step 1, lemon, mulberry, black and white tea and sugar are mixed according to a ratio of 3-5:2-4: preparing materials according to the proportion of 1-3:2-5, soaking the materials in warm water at 60 ℃ for 5 hours to obtain a soaking solution, cooling the materials, and filtering residues by adopting a filtering method to obtain a feed liquid, wherein the proportion of the materials to the water is 1:1500-1:2000;
step 2, under natural conditions, removing stems of cigar tobacco raw materials subjected to agricultural fermentation to obtain cigar tobacco raw materials, atomizing and conditioning the obtained tobacco raw materials, and balancing moisture;
step 3, spraying the feed liquid obtained in the step 1 on the surfaces of tobacco raw materials, and placing the tobacco raw materials sprayed with the feed liquid into a plastic bag or a sealed environment for 24 hours to enable the feed liquid to be fully absorbed;
step 4, transferring the tobacco leaf raw materials in the step 3 into an oak barrel (a gunny bag is arranged in the oak barrel), covering a barrel cover, and then placing the oak barrel in a fermentation chamber to start fermentation;
and 5, regulating the water content of the fermented cigar tobacco leaves to 10-20% for later use.
In the step 4, the room temperature of the fermentation chamber is set as follows: 40+/-5 ℃ and humidity setting of a fermentation chamber: the fermentation time is 2-5 days at 80+ -5deg.C.
In the further scheme, in the step 1, lemon, mulberry, black and white tea and sugar are mixed according to a ratio of 3:2: a ratio of 1:2 is prepared into feed liquid.
In the steps 2 and 3, the tobacco raw materials are atomized and remoistened firstly, and then the moisture is balanced; the mixture is stored in a sealed environment for 24 hours after being sprayed.
The invention has the beneficial effects that:
according to the method for improving quality and enhancing flavor of cigar tobacco leaves by utilizing natural media, the natural materials are prepared into liquid materials to participate in the fermentation process of the tobacco leaves, so that the identity and oil content of the cigar tobacco leaves can be effectively balanced, the fragrance of the cigar tobacco leaves can be improved, and the industrial availability of the cigar tobacco leaves can be improved; the invention is not affected by factors such as nature, has stable result and reliable quality, can greatly improve the aroma of domestic cigar raw materials, effectively reduces the miscellaneous gas and irritation of tobacco raw materials, and ensures that the substances in cigar tobacco raw materials are converted and the aroma is more sufficient.
