The working principle and the using process of the technical scheme are as follows: placing the fried dough twists to be fermented in a tray 21, opening a movable door 2, aligning a plurality of clamping grooves 22 at the bottom of the tray 21 with limiting clamping columns 20 on a turntable 18, and inserting the limiting clamping columns 20 into the clamping grooves 22 to horizontally fix the tray 21 on the turntable 18; the movable door 2 is closed, the heating pipe 38 is opened, the temperature in the shell 1 is controlled within a proper range, the motor 24 is opened, the first belt pulley 19 and the first rotating shaft 17 are driven to rotate through the first transmission belt 30, so that the tray 21 also starts to rotate, the steamed twisted rolls placed in the tray 21 can be uniformly heated, and the difference of the fried twisted fermentation conditions in the tray 21 caused by different temperatures is reduced; in the process of fermentation, water in the water tank 34 can be intermittently conveyed to the spray nozzles 37 through the water pump 35, the fried dough twists in the tray 21 can be sprayed with water mist through the spray nozzles 37, meanwhile, the fried dough twists can be uniformly sprayed with the water mist due to the rotation of the tray 21, through the operation, the fried dough twists can be prevented from being dried due to long-time heating, and the subsequent processing is influenced, meanwhile, the water discharge pipe 5 and the water inlet pipe 6 are respectively arranged on the two sides of the shell 1, so that the water in the water tank 34 can be added or replaced, and the sufficiency and cleanness of a water source can be ensured; after the twist fermentation is completed, the sealing insertion plates 9 on the two sides of the shell 1 are taken down firstly, then the third belt pulley 32 is rotated by controlling the electromagnetic clutch 31, the second transmission belt 33 can drive the cooling fan 12 to work, the heat in the shell 1 can be extracted by the cooling fan 12 through the ventilation hole 7, the temperature inside the shell 1 can be rapidly reduced, the device can be stopped to run later, and the movable door 2 is opened to take out the tray 21.

a heat dissipation assembly for rapidly dissipating heat within the housing (1);
and the driving assembly is used for providing power for the rotating assembly and the heat dissipation assembly.

A fermentation device for fried dough twist production according to claim 3, wherein the driving assembly comprises a motor (24) fixedly mounted at the bottom of the housing (1), the output shaft of the motor (24) is fixedly connected with a second rotating shaft (25), a first bevel gear (26) is fixedly mounted on the outer wall of the circumference of the second rotating shaft (25), the first bevel gear (26) is engaged with a second bevel gear (27), the top of the second bevel gear (27) is rotatably connected with a third rotating shaft (28), one end of the third rotating shaft (28) is fixedly connected with the inner wall of the top of the housing (1), a second belt pulley (29) is fixedly mounted on the outer wall of the circumference of the third rotating shaft (28), a first transmission belt (30) is rotatably connected between the second belt pulley (29) and the first belt pulley (19), the first transmission belt (30) passes through the second partition plate (16), one end of the second rotating shaft (25) is rotatably connected with an electromagnetic clutch (31), a third belt pulley (32) is fixedly connected on the output shaft of the electromagnetic clutch (31), the third belt pulley (32) and a fourth transmission belt (33) pass through the second transmission belt (16), and the second transmission clutch (33) is connected with a second transmission belt (33).
