Description
Technical Field
The invention relates to the technical field related to food detection, in particular to a water-injected chicken judgment and detection method.
Background
"Water-infused meat" is a poor quality product that has become common in recent years. Some vendors or owners can increase the chickens' weight and gain more privacy by injecting water into the meat after slaughtering, and the water injection can increase the net weight by 15% -22%. Many meat experts point out that "water-infused meat" is no less harmful than "clenbuterol". Atropine, alum water, brine, industrial pigment, preservative and the like may be added into the water-injected meat. The water injection reduces the quality of the chicken, is easy to cause pathogenic microorganism pollution and has great potential harm to human bodies.
At present, no professional detection is carried out on water-injected chickens in the market, and the detection methods adopted by the existing meat detection mechanism for the water-injected chickens can be divided into two methods, namely a drying and weighing method and an electrical measurement method, wherein the electrical measurement method can be divided into the following steps: the direct current resistance alternating current capacitance method, the stoving weighing method operation is more complicated, and take time and expense a little, and only use in the laboratory, can not be used for the witnessed inspections, and the limitation is great, and the required instrument of current electricity measuring method is not convenient for the scene to carry, and electricity measuring method when detecting, because of stability is relatively poor, can lead to the precision lower, and detected signal easily receives the interference, easily causes repeatability error big, can not satisfy the requirement of detecting chicken moisture fast, accurately.
