Example 5
A preparation method of water-soluble ganoderma lucidum spore instant coffee powder comprises the following specific steps:
1) Freezing and embrittling treatment, namely putting the ganoderma lucidum spore powder into an environment with the temperature of-70 ℃, quickly freezing for 30 minutes, taking out and quickly putting into a constant-temperature water bath with the temperature of 85 ℃ for unfreezing for 20 minutes, and repeatedly treating for 3 times to obtain embrittled ganoderma lucidum spore powder;
2) High-pressure airflow pulverizing, namely subjecting the embrittled ganoderma lucidum spore powder to high-pressure airflow loading under the conditions of 350MPa, system heating temperature of 140 ℃, pressure maintaining time of 2 hours, impact target distance of 10mm, and sieving with a 400-mesh sieve to obtain wall-broken ganoderma lucidum spore powder;
3) The preparation method of water soluble Ganoderma spore granule comprises mixing wall-broken Ganoderma spore powder with distilled water at a mass ratio of 1. Centrifuging the filtrate at 1500r/min for 10 min, collecting supernatant, concentrating the supernatant to 20% of the original volume, pre-freezing at-30 deg.C for 12 hr, and lyophilizing at-60 deg.C for 48 hr to obtain water-soluble Ganoderma spore particles;
4) Grinding coffee bean into 1000 μm coffee powder, extracting coffee powder with 4 deg.C distilled water under 0.1MPa for 3 hr to obtain extractive solution, concentrating the extractive solution to 20% of original volume, prefreezing the concentrated solution at-30 deg.C for 12 hr, and freeze drying at-60 deg.C for 40 hr to obtain frozen coffee powder;
5) And (2) mixing, namely respectively sieving the frozen coffee powder, the non-dairy creamer and the sweetener by a 100-mesh sieve, then mixing with water-soluble ganoderma lucidum spore granules according to the weight ratio of 2.25g of the frozen coffee powder, 3.45g of the sweetener, 6.75g of the non-dairy creamer and 1.2g of the water-soluble ganoderma lucidum spore granules uniformly to obtain the water-soluble ganoderma lucidum spore instant coffee powder.

1. A preparation process of water-soluble ganoderma lucidum spore instant coffee powder is characterized by comprising the following steps:
(1) Freezing embrittlement treatment: freezing the ganoderma lucidum spore powder at low temperature, immediately performing high-temperature unfreezing treatment, and repeating freezing-unfreezing operation until embrittled ganoderma lucidum spore powder is obtained;
(2) High pressure jet milling, namely performing high pressure jet impact wall breaking treatment on the embrittled ganoderma lucidum spore powder at the pressure of 200-400MPa and the temperature of 140-150 ℃, and sieving to obtain wall-broken ganoderma lucidum spore powder;
(3) Preparing water-soluble ganoderma lucidum spore granules, namely mixing wall-broken ganoderma lucidum spore powder with the mass ratio of 1; centrifuging the filtrate to obtain supernatant, and freeze-drying the supernatant after concentrating to obtain water-soluble ganoderma lucidum spores;
(4) Grinding coffee beans into coffee powder, continuously extracting the coffee powder with low-temperature distilled water under high pressure to obtain extract, concentrating the extract to 20-30% of the original volume, and freeze-drying the concentrated extract to obtain frozen coffee powder;
(5) Mixing, namely respectively sieving the frozen coffee powder, the non-dairy creamer and the sweetener by a 100-mesh sieve for later use; then weighing the following raw materials in percentage by weight:
10-25% of frozen coffee powder, 30-50% of non-dairy creamer, 15-25% of sweetening agent and 5-10% of water-soluble ganoderma lucidum spore powder, wherein the sum of the mass percentages of the raw materials is 100%;
and finally, uniformly mixing the weighed raw materials to obtain the water-soluble ganoderma lucidum spore instant coffee powder.
2. The process according to claim 1, wherein the freezing temperature in step (1) is-40 to-80 ℃, the thawing temperature is 80 to 100 ℃, and the number of repetitions of freezing-thawing operation is 5 to 10.
3. The process according to claim 1, wherein the high-pressure gas stream in step (2) is impinged for 2 hours at a dwell time and at a target distance of 10mm or less.
4. The process of claim 1, wherein step (2) is a 200 mesh screen.
5. The process according to claim 1, wherein the extraction temperature in the step (3) is 80 to 100 ℃, and the extraction is repeated 3 to 5 times; the centrifugal rotating speed of the step (3) is 1500-3000r/min, and the centrifugal processing time is 10-15 minutes.
6. The process according to claim 1, wherein the supernatant of step (3) is concentrated to 10-20% of the original volume and then freeze-dried; the freeze drying is to pre-freeze for 12-16 hours at the temperature of-20 to-40 ℃ and then freeze for 40-48 hours at the temperature of-55 to-65 ℃.
7. The process according to claim 1, wherein the low-temperature distilled water in the step (4) is distilled water at 0 to 10 ℃.
8. The preparation process according to claim 1, wherein the mass ratio of the coffee powder to the distilled water in the step (4) is 1.
9. The process according to claim 1, wherein the pressure of the high-pressure extraction in the step (4) is 0.1-0.9MPa, and the extraction time is 2-6 hours.
10. The process of claim 1, wherein the sweetener in step (5) includes, but is not limited to, white granulated sugar, sweetener, acesulfame potassium.
